This slaw is a snap to toss together and a wonderful, chilly side dish.
- 2 large Granny Smith apples
- 2 cups sauerkraut
- 2 Tbsp. sunflower seeds
- 2 tsp. olive oil
- ½ cup chopped green onions
- Peel and core the apple, and chop or grate it finely.
- Toss the apple and kraut together in a medium-sized bowl until evenly mixed. Let the mixture sit for a few minutes to let the juices and flavors blend.
- Toss in the remaining ingredients, and chill for a few hours before serving cold.
