    This is an absolutely fantastic, must buy book for anyone interested in a beautiful, hands-on guide to making the gamut of fermented eats and drinks. Katz offers a broad, multi-cultural array of recipes, accompanied by a wonderfully compelling narrative. The design and layout of the book is much more user-friendly than his first book, which I found overwhelmingly encyclopedic, with a "Joy of Cooking" kind of breadth. This edition has a beautiful balance and aesthetic that says on many levels, "your journey to excitement and discovery awaits!" and it's going to be fun! I'd give this book as a gift in a heartbeat! Highly recommend!!!

    After reading about Sandor, in The New Yorker magazine, I purchased this book and the accompanying DVD. I have to say it has changed my life. Though we have been making yogurt for over 30 years and have had a sourdough culture living in the fridge for about twenty, being introduced to the writing and philosophy of Sandor Katz has educated me on the value of beneficial as well as benign bacteria in our antiseptic antibacterial obsessed society. We now make our own sauerkraut, kimchi, cortido, horseradish, brined peppers, cucumbers and more. Our cultural arts program has expanded into the care and feeding of kefir grains, kombucha scobys, and mothers of red wine and apple cider vinegars. Get this book and also read his other book "The Revolution Will Not Be Microwaved."

    This is the first book where I've seen a link given between diseases and how fermented foods can be used medicinally to help heal them. The author did a very nice job of tying in all the disorders plus gives a nice selection of fermented food recipes, many of which I've not seen before. She obviously did her research well too!

    i was so worried about making fermented anything believing i would mess it up. in instances like that, i would typically not do anything while waiting for that one thing that would assure me i had the right instruction. this dvd is terrific --- basic, clear and reassuing at the same time. i can read directions but not always certain i am following them correctly. i'm much more a visual learner and this dvd fit my learning style to a T. plus there is the addd benefit of being able to return view it again if i have additional questions. i've watched all segments 2 times already. thanks!
