    I've been on a gluten free diet for about a year now, but I still crave good bread. I wanted to start a sourdough starter so that I could make healthier breads that are soaked and easier to digest. This starter has been so easy to maintain, and the breads I have made are wonderful. I now regularly make pancakes, waffles, tortillas, and a rustic bread loaf. All of these are soaked over night, and none of them bother my stomach! The texture is amazing and the flavor is delicious!

    "It lives!!!!"

    When trying to decide, which starter might be best for me, I read the description of each starter. I couldn't decide on just one, so ended up ordering four different starters. That was about a month ago, so far I have only used one, "The San Francisco Starter." I can tell you, it works like a charm. Although, it isn't necessary, I put the starter in a dough proofer box and kept the temperature at a constant 85 degrees. The starter is growing like mad!!! At first I didn't want to discard any of the starter so I ended up with three containers of starter. It finally dawned on me that if I kept adding jar after jar of starter, I would soon have to make an addition to the size of my kitchen. I suggest following the directions and discard extra starter as directed or make lots of pancakes. My dream was to have all four starters going at the same time. I pictured myself baking lots of bread and comparing the flavor of each starter. Well folks, that was one dumb idea. At the age of 71, taking care of one starter is about all I can handle. I will keep the other three starters in the cabinet and use as needed, that is if I ever need another starter. I might end up giving the starters as gifts to friends, but darn, I am not for sure I want them baking better sourdough bread than I am baking,,,lol. I have a feeling all of the starters are delicious, I can assure you the San Francisco Starter is terrific and I highly recommend it.

    I do not know much about sourdough starters, I tried to make my own but it didn't work, this did. I have had it going for a few weeks now. We have made pancakes, waffles, crepes with the extra sourdough and 2 batches of bread with the starter. The bread was pretty flat because it was gluten free, it tasted good though. I used superfine brown rice flour to feed it, then ran out and have used other flours, it is still doing well.

    It does require more feeding than traditional starter, but I love sourdough pancakes, so it's no big deal to me! Very tasty for being gluten-free, and I've been able to make decent bread with it as well. Due to food allergies, I have to avoid dairy, gluten, egg, soy, and other ingredients, so this brown rice starter has been a godsend for being able to enjoy gluten-free goodies.

    I am just putting my oven to 400 degrees so that I can make my first two loaves of sourdough bread. I am so excited. I guess you're reading this and thinking, 'So why the five stars if you haven't made the bread yet?' I made waffles!!!! When you are activating your sourdough you tend to have a lot and I mean A LOT of starter develop very quickly. I hated wasting so much of the starter so I followed the recipe for waffles. I added a little extra flour because my starter was softer but O M G!!! The best waffles EVER!!!! I have been enjoying them for about three or four days. I am down to my last one and I am already oh so sad. I have about 4 cups of starter still semi-activated in the fridge soOOooo!!! I am going to pull it out and make some more sourdough waffles!! Excellent dessert, which is how I eat them, but I think they would make a great breakfast too. The bread I am about to bake has risen better than any bread I have ever made and I have been making bread for about 2 years. Now I am just dying to try this sourdough as a bread. I bet it will be awesome!!!

    I have to admit that I messed up my first batch by not putting enough salt in the mix. However, I just ate this bread with some goats milk bree and WOW!!! Delicious!! It is worth it.

    "Delicious and easy"

    I had no trouble activating the sourdough from the package and I've been making bread now for a few weeks. I love the texture of sourdough bread. I've messed around with different recipes and even just guessing at quantities and it has always turned out well. I use extra starter to make pancakes sometimes. Sour pancakes with syrup is delicious. I wouldn't hesitate to try it. You do need to feed the starter often at first with more flour and water, but then you can keep it in the fridge and the feeding slows down. I love it!

    I've tried many times to make my own starter from scratch with very little success. I feel this starter actually helped me SAVE money because I didn't have to throw away product and time after failing miserably. I was very happy with the results. My starter started bubbling with in several days and I've now had 4 successful loaves and two amazing batches of pancakes (delicious with homemade strawberry sauce!).

    "My first starter - a dream to work with."

    After unsuccessfully trying to make my own starter from scratch I purchased these starter cultures. A year later, and I am in love with baking sourdough breads. This culture is un-fussy - the rise is FAST!! almost as fast as breads with yeast, and one feeding out of the fridge has it ready to go for baking day. I highly recommend this culture for beginning sourdough bakers. I fiddled around with a few recipes but now have a reliable 80% whole wheat sandwich style bread that I can adapt to suit my moods. I don't find it overly sour as the other reviewer mentioned - but to make it even less so I add in a bit of baking soda to counter-act the acidity - in my opinion this is a better a solution than adding sweetener. Do not think that you can only make Rye breads with this rye starter. It has worked beautifully in many different recipes with all different types of flour.

    "Update after 2 years"

    This review is a followup for my previous review. The New Zealand starter has been excellent. I've cultured it with barley, rye, and wheat, and made numerous types of breads, pizzas, English muffins, pancakes, and even desserts (like gingerbread, cookies) with it. It has been very adaptable, tolerating a wide range of temperatures (after it was already live). I love how quick it is, as well. The only thing I'd change in my last review is my review on price - it's absolutely worth it. At the time, I didn't appreciate the value of what I was buying, as it was my first starter, and I didn't realize it could last a lifetime. Of course it's worth the minimal initial investment! All and all, I think that making my family's bread from scratch has been our biggest dollar saver and health enhancer.

    "First timer here. Glad I went for it."

    This is my first starter and I was sure I would kill it, but I didn't! I pampered it the first few days with one slip up that made me feel like a bad parent ;) I have since realized it's pretty forgiving. My first two loaves went well. The flavor was very mild but the bread cut really well (not crumbly) and made great toast. From what I have read, the flavor may improve with age and from keeping it just a bit dryer of a starter, not so wet. I moved it to the refrigerator just over a week ago after deciding I was discarding too much starter... pouring money down the drain. We don't eat a lot of bread so I will keep it refrigerated most of the time. I tried some bread sticks one evening and they failed terribly. You really need a good recipe and time to follow correctly and time to experiment. My experience is very little so far. I hope to try rolls and pretzels but so far the bread is good and that's the reason I bought the starter, so I'm good with that. I took it out last night, fed it and left it on the counter. I will be making my second batch of sourdough bread today. If you enjoy baking and healthy bread, give it a try.

    I bought this about 2 yrs ago for culturing my yogurt. I can put any size cup, bowl or other container in it ti do the yogurt. It keeps the temp constant and my yogurt has always turned out well after using this proofer. I have also used it for thawing meats when I have forgotten to plan ahead. Two or 3 hours will thaw a pound of gr beef so dinner won't be late. When i am not using it I can fold it up and store it in a small slot. Very convient feature that I also like. I would buy it again and if I get to the point of being able to make bread again my proofer will be ready.

    My sister gave me this thermometer, which she had originally purchased for culinary school, about 3 or 4 years ago. It gets regular use and has stood up to quite a bit of abuse. Very reliable and quick to indicate temperature changes. I have used it for everything from roast chicken, to Swiss meringue, to yogurt making. Should mine ever brake (and it shows no signs of doing so anytime soon) I would not hesitate to buy the same model again. Highly recommended.

    There is nothing fancy, just a "Basic Thermometer." If you don't need accuracy or long reach it will do a fine job.

    The thermometer works but disagrees with my other thermometers. I have two others that show to add starter at a lower temperature. I don't know which is most accurate. Also, the round top dial is very small and hard to read. Response from CFH: Thermometers can be calibrated. Please contact Customer Support for advice or for replacements for defective products.

    "Interesting information, but disappointing recipes"

    The description of this book made it sound great, but I was overall disappointed. The recipes are very general and are vegan or vegetarian (which is not clear in the description). I like like to include milk, eggs, and butter in my baking. I was looking for something with specific recipes, but it just had a lot of basic guidelines. Good things about the book include an interesting history, some good tips on caring for your starter, and good baking guidelines. After reading it through, this book is probably just going to sit on my shelf until I can resell it. I found other books to be more helpful.

    There is a lot of information on the history of bread, but if you are a beginner the book is difficult to use. It lacks a clearly worded, well organized basic recipe for using sourdough starter to make a basic loaf. - the instructions are not well written. In addition we found the weights of starter to flour ratios in the basic recipe to be printed incorrectly - they need to be reversed to work correctly!

She does a very good job of explaining the science behind gluten-free sourdough baking so that the reader has a better understanding and confidence at creating/troubleshooting his/her own breads. I'm very pleased with this purchase thus far.

    I am quite disappointed in this book. The format and binding are rather "cheap", especially for a book that costs over $27. I was expecting a better value for the price. I have been gluten-free for several years, but am new to sourdough baking. Sharon's techniques and recipes seem quite complicated and unpractical for a mother with young children and a busy household. I will be returning my copy for a refund.
