Rejuvelac Cashew Vegan Cheese

If you follow a vegan lifestyle and are looking for a cheesy spread, this might just do the trick for you!  Start with rejuvelac, a fermented drink made from sprouting wheat berries. Then combine it with soaked cashew nuts, salt, and herbs to get a delicious raw vegan cheese-type spread.



  • 2 cups cashews
  • ½ cup rejuvelac
  • Dash sea salt
  • Dried herbs or pepper to coat


  1. Cover cashews with water and soak overnight. Drain off water.
  2. Place cashews in a food processor or high-speed blender and process with rejuvelac until a smooth paste forms. You can add a dash of sea salt.
  3. Line a strainer with 2 layers of cheesecloth or use a nut bag.
  4. Spoon the mixture into the cloth or bag. Set in a warm place and let set for 24 hours.
  5. Form the cheese into rounds or logs and coat the outside with herbs or cracked pepper.
  6. Put in refrigerator to solidify.

The “cheese” will keep in the refrigerator for about a week. Serve with baguette slices or seeded crackers, or spread on sandwiches. You can also freeze some and grate it for a garnish.
