Probiotic-rich Cheese Relish


This tangy concoction is full of cultured ingredients and can be used in place of pimento spread. It is great on crackers or grilled sandwiches or stirred into tuna. Keep cold and covered when not in use.


  • 2 tablespoons capers
  • 3-1/2 cups grated Swiss cheese
  • 1-1/2 cups fresh lacto-fermented banana peppers
  • 2 tablespoons fresh chives, minced
  • 3 tablespoons sour cream
  • Red pepper flakes
  • Sea salt and black pepper to taste


  1. Soak the capers in cool, unchlorinated water for about 10 minutes. Drain.
  2. Stir together capers and all other ingredients, adding the spices to taste. Cover tightly and place in the refrigerator for 2 to 3 hours to chill before serving.
  3. Will keep covered tightly in refrigerator for 2 to 3 days.
