I recently became a huge fan of milk kefir and so I wanted to try out the kefir grains offered. After seeing it could take up to a week before they activated I was determined to get them started off strong. Not two days later, literally on my second batch using grass-fed ultra-pasteurized whole milk (I know it says to avoid using ultra-pasteurized but it was the best I could find) and they cultured 1 cup entirely! Thick as yogurt and delicious! I'm looking forward to the daily 4 cups of kefir these nutritional magicians will be producing! Absolutely phenomenal grains and instructions for activating.

I received my grains on a Saturday afternoon. It was very warm that day (82 degrees F) and they sat in the mailbox for several hours before I found them. I immediately put them in grass-fed pasteurized milk and they cultured about 2 cups in 24 hours. I strained that and put in 2 cups of raw milk. Within about 16 hours I had curds and whey! It was terrific but I realized I should probably give them a couple more rounds of pasteuried milk before moving to raw milk completely. I did two more 24 hour rounds of pasteurized milk and am now giving them only raw milk. They culture a little less than 1 quart of raw milk within 16-24 hours every day and it's absolutely delicious!
I thought I really messed it up. I put them into a quart of raw milk instead of ½ C. Then we tasted the first batch forgetting to discard the 1st (don't do that). But the 2nd and there after is amazing. Weren't used to it yet so we added organic onion powder, garlic salt, cilantro, and paprika to find the best salad dressing we have had to date! I am growing to love the fizzy taste plain but all little more time on that. But we don't want to share the dressing right now anyway (and a tangy spice) i have plans for the whey to make fermented lemonade, ketchup, and mustard. Yum. Thank you guys so much as I didn't know anyone here in ok that had kefir grains.

My first grains lasted 2 1/2 years before somehow being tainted. Rehydrate my new grains and my kefir is turning out nicely.
