Extra kombucha scobys can pile up quickly if you are an avid kombucha brewer. When you tire of composting those scobys, try one of our methods for making a batch of scoby candy. It's a delicious, gummy, probiotic treat!
METHOD #1
Ingredients:
Kombucha scoby Kombucha scoby Kombucha scoby
Sugar Sugar Sugar
Instructions:
Using a sharp knife, cut the scoby into 1-inch chunks.
Mix the scoby pieces with sugar, using about the same amount of sugar as there are scoby pieces, to thoroughly coat.
Put the coated scoby into a pot and heat to boiling. Boil for 15 minutes, then cool slightly.
Pour off extra syrup and spread on parchment paper to cool completely.
METHOD #2
Ingredients:
Kombucha scoby
Raw Honey
Instructions:
Using a sharp knife, cut the scoby into 1-inch chunks.
Place scoby chunks in a bowl and cover with raw honey; soak for 24 hours.
Drain and spread on lined dehydrator tray.
Dehydrate at 110ºF for up to 48 hours, or until desired consistency is reached.
METHOD #3
Ingredients:
Kombucha scoby
Maple syrup or honey
Filtered water
Instructions:
Using a sharp knife, cut the scoby into 1-inch chunks.
Place scoby chunks in a bowl and add a liquid mixture of 50% sweetener and 50% water, to cover; soak for 24 hours.
Drain and spread on lined dehydrator tray or parchment paper. Cover with a cloth to keep pests away, if not using a dehydrator.
Dry at 80-90ºF until desired consistency is reached.
