Different yogurt starters culture under different conditions. Mesophilic yogurt starters culture at 70-77° F. Thermophilic yogurt starters culture at 110° F. Heirloom yogurt starters are re-usable starters and can be used to culture batches of yogurt indefinitely with the proper care. Direct-set yogurt starters are single use starter cultures and can be used to culture one batch of yogurt.
