I'm a cream cheese-making fool now, thanks to this kit!
I purchased the Fresh Cheese Making Kit, and have made 3 batches of cheese: mascarpone, cottage cheese and ricotta. The first batch I followed the directions to the letter. Since I use raw Jersey cow milk and cream, I found the curds too firm with the calcium chloride, I left it out of the other batches, and had excellent results. I have already recommended this kit to some of my friends eager to make their own cheese at home.
See review from 2013 about fromage blanc...still has not been corrected in the booklet i received. Now I'm faced with possibly wasted gallon of my raw goat milk. So unhappy! Some other aspects are great, but besides this the rennet has issues too.
Response from CFH: The instructions included with this starter (http://www.culturesforhealth.com/media/docs/Fromage_Blanc_Instructions.pdf ) are up-to-date and accurate. No extra rennet is needed when using this starter. The recipe on our website (http://www.culturesforhealth.com/how-to-make-fromage-blanc-recipe ) has 2 options, one of which uses rennet and a mesophilic cheese starter. We are very sorry for any confusion.
my first time making cottage cheese and cream cheese. instructions were ok, got a little confused, but, I was able to work my way through and ended up with an edible product! It would be nice to have a list of items that one needs to have when you first start into cheese making so you have everything on hand (butter cloth, hard cheese molds, more explanation of which cultures are needed to make which types of cheeses, press, etc. )
I have not made cheese with it yet; I want to make it with grass-fed cows milk, and it's a bit of an investment. The kit appears to be complete; I did unpack it immediately and put the starter in the freezer until I can make the cheese. I am looking forward to having some great cheese!
Our first goat cheese was excellent - the instructions and quality of the kit were exceptional. I hesitated buying the kit because of the high price, but I was inexperienced and hoped this would help me be successful. It did, and our B&B guests really enjoyed the fromage blanc. I'll look for a more economical way to get into other cheeses.
I have made two kinds of cheese thus far with this kit. The fromage blanc came out very well, the feta seems to need more practice. The instruction booklet is very clear, though I noticed with the fromage recipe, the ingredient list called for rennet, but there were no instructions in the recipe as to how or when it was to be used.
Response from CFH: The fromage blanc recipe in the kit booklet does omit the rennet. We apologize for the error and will have that corrected right away.
everything was in the kit, BUT the thermometer was way to small, hard to hold and even harder to read it. I would suggest buying your own from Wal-Mart.
