    "Great instructions, but you probably have all the stuff you need"

    I ordered this kit because I want to branch out from my yogurt-making into making my own cheese, as well. First, before I get to the minutiae, let me tell you that I finished my first batch of paneer today. It was SO easy! The instruction book was very clear, the process was very easy and the cheese turned out great. I was able to slice and fry it for an Indian curry tonight. Now, here's the nitty gritty: * The thermometer that comes in the kit is super tiny (and the face on mine was scratched pretty badly when it arrived, anyway). I have a large-face yogurt thermometer that I prefer to use. You will NOT need this with the paneer, but you will with the queso. Probably better off buying a large face thermometer on your own. * The butter muslin is really nice and they give you a very generous amount. I already had one, but mine is much smaller. * There is a nice-size bag of powdered citric acid. * The instruction book is very well written and easy to follow. Now, given all of this, you're probably better off to go buy your own butter muslin, citric acid and thermometer of your choice. If you already have one (or more) of the items in this kit, don't buy it. However, if you have nothing, are absolutely new to the world of cheesemaking and don't know the first thing about buying any of this stuff on your own, then I'd spend the money. In all, it's a nice kit. I just wish I'd had the confidence (and common sense!) to realize that I already had most of these components in my kitchen. :-)

    "Non-microwave stretching method did not work for me"

    I had a lot of trouble with this recipe, specifically heating up the curd to 160-170 degrees with the non-microwave method. (I don't own a microwave.) It took FOREVER to get it that hot (20 minutes) but the instructions imply it should only take a few dunks. By the time the temperature in the middle of the mass of curd reached 160, I think the texture of the curd was ruined. It never did become stretchy. While the final product tasted good, it did not have a stretchy texture at all. I am a novice and as you say, it is an art and a learning process. I think I need to make some less ambitious cheeses first, then maybe try this again with a microwave available. Suggestion: please test the non-microwave method again and revise your booklet instructions, they don't seem right. Maybe this cannot be done without a microwave.     Using this kit was a perfect introduction to goats milk and cheese making. The only confusion I experienced was exactly how to add the salt at the end, but I improvised with a potato masher and it all worked out fine. Will enjoy making chèvre again, as I feel quite emboldened by this success on my first try.

    I purchased the Fresh Cheese Making Kit, and have made 3 batches of cheese: mascarpone, cottage cheese and ricotta. The first batch I followed the directions to the letter. Since I use raw Jersey cow milk and cream, I found the curds too firm with the calcium chloride, I left it out of the other batches, and had excellent results. I have already recommended this kit to some of my friends eager to make their own cheese at home.

    See review from 2013 about fromage blanc...still has not been corrected in the booklet i received. Now I'm faced with possibly wasted gallon of my raw goat milk. So unhappy! Some other aspects are great, but besides this the rennet has issues too. Response from CFH: The instructions included with this starter (http://www.culturesforhealth.com/media/docs/Fromage_Blanc_Instructions.pdf ) are up-to-date and accurate. No extra rennet is needed when using this starter. The recipe on our website (http://www.culturesforhealth.com/how-to-make-fromage-blanc-recipe ) has 2 options, one of which uses rennet and a mesophilic cheese starter. We are very sorry for any confusion.

    my first time making cottage cheese and cream cheese. instructions were ok, got a little confused, but, I was able to work my way through and ended up with an edible product! It would be nice to have a list of items that one needs to have when you first start into cheese making so you have everything on hand (butter cloth, hard cheese molds, more explanation of which cultures are needed to make which types of cheeses, press, etc. )

    Instructions are very clear and I'm already on my fifth batch. The fizziness is a little hard to achieve, but I guess it depends on the recipe. Our peach flavor is not at fizzy, but the lemon/ginger was more bubbly.

    Started my first batch of water kefir. Made a bottle of mixed berry 'soda' from it. Have made several different flavors since. Also have used in a recipe for fermented cucumber pickles.     I was a little bit concerned about ordering this. But, it turned out to be simple enough that it worked well for me and had no problem getting the Kefir Grains started. The first batch took almost 2 days, but we keep the heat down in our house so it really wasn't up to the optimum temperature. However, it has worked well and we have made 4 batches so far with excellent results. We found the instructions very easy to follow and very happy with the overall product. We did research the milk we purchased to verify pasteurization and antibiotic free cows and feed. This is a great product and we would, and already have, recommended it to others.

    "One Year Later....."

    One year later and wow! They are still going strong. I have to consistently feed grains to my pup in order to keep production at a quart a day (Coat Looks Awesome! and she begs for it :)) . Warmer months are more productive than cooler months. I wasn't sure at first with the flavor, but after a few months, I learned what I like and what that looks like in the jar. It has done amazing things for my health and immunity! Amazing, and life changing. So yeah...it's worth it.

    The kefir grains worked just great, and taste great! However, I wish I had purchased just the grains, and not the kit. The temperature strip was not helpful (to me at least), and the strainer is so small that it takes forever to strain the kefir. I now use a fine strainer that I already had, and that works great. The cheesecloth was useful, and if I decide to try to make cheese, I think it will help. But, all in all, the grains are what I needed. I would order them again if I ever need to.

    I wasn't prepared for the final result. I've had a lot of kefir in my day. I love the sour taste. I followed the directions to a T. However all I got was rancid tasting kefir. I even tried the double fermentation how to. This was supposed to make it more palatable. It wasn't. I was very disappointed. Response from CFH: We are terribly sorry to hear this.     This was my first attempt at making vegan yogurt and I was pleasantly surprised at how easy it was. The end result was also very tasty for a first try. Will make a few tweaks on the next batch and should get it just right !

    "Great Yogurt Kit"

    First time using the Vegan yogurt starter and my yogurt maker; and neither let me down. The yogurt similar in texture to tapioca; but I like tapioca. It (cashew milk) set solid and I used a little more calcium water than instructed and I let it cook for 12 hours not 8-10. I flavored it with dried cranberries once and whole canned cranberries the second time. Making my own yogurt is half as expensive and the store bought is 45min away. I am lactose intolerant so this kit lets me have one of my favorite foods again. I recommend this to anyone who loves yogurt the Vegan style.
