"Great instructions, but you probably have all the stuff you need"
I ordered this kit because I want to branch out from my yogurt-making into making my own cheese, as well. First, before I get to the minutiae, let me tell you that I finished my first batch of paneer today. It was SO easy! The instruction book was very clear, the process was very easy and the cheese turned out great. I was able to slice and fry it for an Indian curry tonight. Now, here's the nitty gritty: * The thermometer that comes in the kit is super tiny (and the face on mine was scratched pretty badly when it arrived, anyway). I have a large-face yogurt thermometer that I prefer to use. You will NOT need this with the paneer, but you will with the queso. Probably better off buying a large face thermometer on your own. * The butter muslin is really nice and they give you a very generous amount. I already had one, but mine is much smaller. * There is a nice-size bag of powdered citric acid. * The instruction book is very well written and easy to follow. Now, given all of this, you're probably better off to go buy your own butter muslin, citric acid and thermometer of your choice. If you already have one (or more) of the items in this kit, don't buy it. However, if you have nothing, are absolutely new to the world of cheesemaking and don't know the first thing about buying any of this stuff on your own, then I'd spend the money. In all, it's a nice kit. I just wish I'd had the confidence (and common sense!) to realize that I already had most of these components in my kitchen. :-)

"Non-microwave stretching method did not work for me"
I had a lot of trouble with this recipe, specifically heating up the curd to 160-170 degrees with the non-microwave method. (I don't own a microwave.) It took FOREVER to get it that hot (20 minutes) but the instructions imply it should only take a few dunks. By the time the temperature in the middle of the mass of curd reached 160, I think the texture of the curd was ruined. It never did become stretchy. While the final product tasted good, it did not have a stretchy texture at all. I am a novice and as you say, it is an art and a learning process. I think I need to make some less ambitious cheeses first, then maybe try this again with a microwave available. Suggestion: please test the non-microwave method again and revise your booklet instructions, they don't seem right. Maybe this cannot be done without a microwave. My second try was successful! The cheese formed exactly as described in the instructions that came with the kit. My first attempt was not successful but a lovely customer service person walked me through the instructions and I tried all her suggestions and it worked perfectly! Great Product

This kit is the way to go - all you need minus the milk. Instructions are simple but answered all my questions. Lots of fun.

This kit really contains everything you need to make the cheese. My first batch was terrible, but I realized what I did wrong. I tried again and it was great! I've only made the mozzarella so far and it was delicious.

I was happy with my purchase of this product. This kit is definitely for an experienced cook. My fresh mozzarella came out tasting pretty OK...I just know for next time to stretch it more. Rubber gloves help because the cheese is REALLY hot.

Using this kit was a perfect introduction to goats milk and cheese making. The only confusion I experienced was exactly how to add the salt at the end, but I improvised with a potato masher and it all worked out fine. Will enjoy making chèvre again, as I feel quite emboldened by this success on my first try.

I purchased the Fresh Cheese Making Kit, and have made 3 batches of cheese: mascarpone, cottage cheese and ricotta. The first batch I followed the directions to the letter. Since I use raw Jersey cow milk and cream, I found the curds too firm with the calcium chloride, I left it out of the other batches, and had excellent results. I have already recommended this kit to some of my friends eager to make their own cheese at home.

See review from 2013 about fromage blanc...still has not been corrected in the booklet i received. Now I'm faced with possibly wasted gallon of my raw goat milk. So unhappy! Some other aspects are great, but besides this the rennet has issues too. Response from CFH: The instructions included with this starter (http://www.culturesforhealth.com/media/docs/Fromage_Blanc_Instructions.pdf ) are up-to-date and accurate. No extra rennet is needed when using this starter. The recipe on our website (http://www.culturesforhealth.com/how-to-make-fromage-blanc-recipe ) has 2 options, one of which uses rennet and a mesophilic cheese starter. We are very sorry for any confusion.
"made cottage cheese and cream cheese"
my first time making cottage cheese and cream cheese. instructions were ok, got a little confused, but, I was able to work my way through and ended up with an edible product! It would be nice to have a list of items that one needs to have when you first start into cheese making so you have everything on hand (butter cloth, hard cheese molds, more explanation of which cultures are needed to make which types of cheeses, press, etc. )

I have not made cheese with it yet; I want to make it with grass-fed cows milk, and it's a bit of an investment. The kit appears to be complete; I did unpack it immediately and put the starter in the freezer until I can make the cheese. I am looking forward to having some great cheese!
"Easy to make soft cottage cheese"
My wife had a culture from her friend that we kept reusing. Then, one sunny day i accidentally didn't put some culture aside and used all of it for cottage cheese. I looked online for a similar product and found this. This culture is very similar to what we used. It is very easy to make cheese.

I used this for the first time last evening and the milk is ready to drain for cheese. I will probably just add juice concentrate and freeze it for sherbet.

I ordered this thermometer because I had a coupon. This is my first digital thermometer. I like it because it is waterproof. I use it to make yogurt and kefir. In the past, I have bought Taylor brand standard thermometers and found them to be good quality. I'm expecting this one to hold up well also.
