    "Great instructions, but you probably have all the stuff you need"

    I ordered this kit because I want to branch out from my yogurt-making into making my own cheese, as well. First, before I get to the minutiae, let me tell you that I finished my first batch of paneer today. It was SO easy! The instruction book was very clear, the process was very easy and the cheese turned out great. I was able to slice and fry it for an Indian curry tonight. Now, here's the nitty gritty: * The thermometer that comes in the kit is super tiny (and the face on mine was scratched pretty badly when it arrived, anyway). I have a large-face yogurt thermometer that I prefer to use. You will NOT need this with the paneer, but you will with the queso. Probably better off buying a large face thermometer on your own. * The butter muslin is really nice and they give you a very generous amount. I already had one, but mine is much smaller. * There is a nice-size bag of powdered citric acid. * The instruction book is very well written and easy to follow. Now, given all of this, you're probably better off to go buy your own butter muslin, citric acid and thermometer of your choice. If you already have one (or more) of the items in this kit, don't buy it. However, if you have nothing, are absolutely new to the world of cheesemaking and don't know the first thing about buying any of this stuff on your own, then I'd spend the money. In all, it's a nice kit. I just wish I'd had the confidence (and common sense!) to realize that I already had most of these components in my kitchen. :-)

    I found this company through a search engine as our son wanted to learn cheese-making.     I have made two kinds of cheese thus far with this kit. The fromage blanc came out very well, the feta seems to need more practice. The instruction booklet is very clear, though I noticed with the fromage recipe, the ingredient list called for rennet, but there were no instructions in the recipe as to how or when it was to be used. Response from CFH: The fromage blanc recipe in the kit booklet does omit the rennet. We apologize for the error and will have that corrected right away.

    I have not made cheese with it yet; I want to make it with grass-fed cows milk, and it's a bit of an investment. The kit appears to be complete; I did unpack it immediately and put the starter in the freezer until I can make the cheese. I am looking forward to having some great cheese!

    I purchased the Fresh Cheese Making Kit, and have made 3 batches of cheese: mascarpone, cottage cheese and ricotta. The first batch I followed the directions to the letter. Since I use raw Jersey cow milk and cream, I found the curds too firm with the calcium chloride, I left it out of the other batches, and had excellent results. I have already recommended this kit to some of my friends eager to make their own cheese at home.

    My wife had a culture from her friend that we kept reusing. Then, one sunny day i accidentally didn't put some culture aside and used all of it for cottage cheese. I looked online for a similar product and found this. This culture is very similar to what we used. It is very easy to make cheese.

    I have found Ricki Carroll's book to be an indispensible resource for my cheese making efforts. I tried out many recipes for both aged and fresh cheeses. For the fresh cheeses, I used several types of chevre starters, and fromage blanc with success. In Ricki's book, she has a "Note:" that says "Flora Danica is an excellent fresh goat cheese starter for any of the soft cheese recipes...". So I tried out the Flora Danica - and subsequently tossed out all of my other soft cheese starters! Why would I want to spend time and milk making something less tasty than the Flora Danica?? It is amazingly delicious!

    These cultures made the perfect sour cream. I bought this particular product because I'm able to make so many different things with it. My first was sour cream. Quick and easy and got 4 pint jars from 1 quart of whipping cream. I added an 1/8 teaspoon of culture and then 1/8 teaspoon of sea salt when complete.     I was looking for an alternative for Rejuvilac or pro-biotic pills while making cultured cashew 'cheese' I did an experiment with 4 - 2 cup batches and varied the culture on each... this culture was by far my favorite... it came out very nice even my girlfriend liked this best even though she is traditional and likes my buckwheat rejuvilac. BTW: Your support/customer support said it wouldn't work or that you hadn't tried it or something discouraging. I tried it anyway and it worked great. Response from CFH: Our cheese cultures do contain dairy and are therefore not suitable for those with allergies or who avoid all dairy products.

I must have poured a dozen and a half gallons of milk down the sink over the course of my first year in cheese making.     I make Feta cheese with cow's milk and this lipase gives it the "edge" the cheese needed. When I can't get goat's milk, I use cow's milk from the grocery and this lipase makes up the difference.     Especially for straining out yogurt and cream cheese, I strongly prefer an unfolded cloth diaper. This has very very thin material, it does not hold up to washing or re-use -- and as such, I found it expensive too. The unfolded cloth diapers I use instead are a good deal thicker, and yet still maintain the bird-eye weave for good draining, are hemmed, and can be re-used hundreds of times. Because that product is available in other places, I find this one a poor expenditure. I'm sorry. :(

    Not flimsy at all. Plastic is thick and durable. The follower plate is also very thick and rigid. The follower is just a flat plate and does not have any type of "handle" or outset walls to hold a press foot, can, or whatever you want to use. So if you're only making 1-2lbs of cheese, you'll have to make sure your press is able fit down inside the cylinder or use a can as a spacer or something. It has a bottom with holes and also 6 little nubs on the bottom which keep the bottom off the counter and allow liquid to escape. As was said in the Q&A, the diameter of the cylinder changes maybe 1/4" from bottom to top. The follower goes ALMOST all the way to the bottom. 1 lb loads could be done with this.

    I bought this mold to make feta. I asked before ordering, if the mold would hold cheese made from a gallon of milk, and was assured that it would. The good news is that the curds did fit. The bad news is that there is almost no room for the brine. Also- not sure what I was thinking; feta is made in blocks, not in round containers. Not sure what I will use this for but know that I won't be using it for feta. Response from CFH: Feta is often made in the round container with great results - you actually need very little brine, and you don't want any brine to spill over. Too much brine results in a squishy/mushy cheese, and we sure don't want that! We do hope you'll try again with it!

    My sister gave me this thermometer, which she had originally purchased for culinary school, about 3 or 4 years ago. It gets regular use and has stood up to quite a bit of abuse. Very reliable and quick to indicate temperature changes. I have used it for everything from roast chicken, to Swiss meringue, to yogurt making. Should mine ever brake (and it shows no signs of doing so anytime soon) I would not hesitate to buy the same model again. Highly recommended.

    It's simply a cup with small drainage holes, but works well for its intended purpose. After draining chevre in cheesecloth for 3+ hours, I fill these cups, weight them, and set them over drainage mats overnight and they produce nice cylinders of cheese by morning.

    I already had 4 of these molds and found them to be very useful for small soft cheese but also realized quickly you need a lot of them even for a small batch. Was making Catamount cheese and need at least 6 and possibly even 8 of these molds to get the proper height for the cheese. Good quality, drain well and sterilize and clean easily.

    Authentic look? The mold may be good for draining feta and other cheeses, but feta traditionally is cut into pieces before it's salted and brined.
