    I ordered this kit because I want to branch out from my yogurt-making into making my own cheese, as well. First, before I get to the minutiae, let me tell you that I finished my first batch of paneer today. It was SO easy! The instruction book was very clear, the process was very easy and the cheese turned out great. I was able to slice and fry it for an Indian curry tonight. Now, here's the nitty gritty: * The thermometer that comes in the kit is super tiny (and the face on mine was scratched pretty badly when it arrived, anyway). I have a large-face yogurt thermometer that I prefer to use. You will NOT need this with the paneer, but you will with the queso. Probably better off buying a large face thermometer on your own. * The butter muslin is really nice and they give you a very generous amount. I already had one, but mine is much smaller. * There is a nice-size bag of powdered citric acid. * The instruction book is very well written and easy to follow. Now, given all of this, you're probably better off to go buy your own butter muslin, citric acid and thermometer of your choice. If you already have one (or more) of the items in this kit, don't buy it. However, if you have nothing, are absolutely new to the world of cheesemaking and don't know the first thing about buying any of this stuff on your own, then I'd spend the money. In all, it's a nice kit. I just wish I'd had the confidence (and common sense!) to realize that I already had most of these components in my kitchen. :-)

    "Non-microwave stretching method did not work for me"

    I had a lot of trouble with this recipe, specifically heating up the curd to 160-170 degrees with the non-microwave method. (I don't own a microwave.) It took FOREVER to get it that hot (20 minutes) but the instructions imply it should only take a few dunks. By the time the temperature in the middle of the mass of curd reached 160, I think the texture of the curd was ruined. It never did become stretchy. While the final product tasted good, it did not have a stretchy texture at all. I am a novice and as you say, it is an art and a learning process. I think I need to make some less ambitious cheeses first, then maybe try this again with a microwave available. Suggestion: please test the non-microwave method again and revise your booklet instructions, they don't seem right. Maybe this cannot be done without a microwave.     I purchased the Fresh Cheese Making Kit, and have made 3 batches of cheese: mascarpone, cottage cheese and ricotta. The first batch I followed the directions to the letter. Since I use raw Jersey cow milk and cream, I found the curds too firm with the calcium chloride, I left it out of the other batches, and had excellent results. I have already recommended this kit to some of my friends eager to make their own cheese at home.

    See review from 2013 about fromage blanc...still has not been corrected in the booklet i received. Now I'm faced with possibly wasted gallon of my raw goat milk. So unhappy! Some other aspects are great, but besides this the rennet has issues too. Response from CFH: The instructions included with this starter (http://www.culturesforhealth.com/media/docs/Fromage_Blanc_Instructions.pdf ) are up-to-date and accurate. No extra rennet is needed when using this starter. The recipe on our website (http://www.culturesforhealth.com/how-to-make-fromage-blanc-recipe ) has 2 options, one of which uses rennet and a mesophilic cheese starter. We are very sorry for any confusion.

    my first time making cottage cheese and cream cheese. instructions were ok, got a little confused, but, I was able to work my way through and ended up with an edible product! It would be nice to have a list of items that one needs to have when you first start into cheese making so you have everything on hand (butter cloth, hard cheese molds, more explanation of which cultures are needed to make which types of cheeses, press, etc. )

    "Easy peasy"

    So simple to do. I am fortunate to have a goat lady near me who sells her milk - so it's super fresh. Easily the best goat cheese I have ever had. I've made it plain, with rosemary, with basil, pepper, lemon rind...wrapped in basil leaves and stored in olive oil (makes for a yummy dressing or cooking oil when the cheese is gone.) I make ricotta form the whey - don't throw that out, you'll get more use out of it. So simple, fast and easy, and so good.

I anticipated needing the coloring, but then rennet, then cheese cloth, then a device to separate things. I have made 5 course meals with less effort.     I've been using this culture to make my cream cheese for the last 9 months. The culture seems very dependable when used per the recipe here, although I often extend the incubation to 24 hours. I use 3/4 whole milk and 1/4 cream and the result is a pleasantly mild cream cheese with a light acidity and slightly buttery flavor. Indispensable, I never buy cream cheese anymore.

    I was looking for an alternative for Rejuvilac or pro-biotic pills while making cultured cashew 'cheese' I did an experiment with 4 - 2 cup batches and varied the culture on each... this culture was by far my favorite... it came out very nice even my girlfriend liked this best even though she is traditional and likes my buckwheat rejuvilac. BTW: Your support/customer support said it wouldn't work or that you hadn't tried it or something discouraging. I tried it anyway and it worked great. Response from CFH: Our cheese cultures do contain dairy and are therefore not suitable for those with allergies or who avoid all dairy products.

    Although the package of rennet said refridgerate, there was no ice pack or any attempt to keep the package cool that was shipped to Florida in the summer. I don't know if this was the reason my cheese making attempt failed, but, sadly, after following directions precisely, including using 2 different thermometers just to be sure, there was no mozzarella just a sauce textured liquid. Tasty but not the treat I was planning. Will try with different milk and see if that works. Response from CFH: We ship all year long with relatively few instances of failure due to heat.     Wanted to buy liquid vegetable rennet as opposed to the regular stuff. In the past, I bought a similar product from a cheesemaking website and the results were TERRIBLE (way too active). This product from Cultures for Health is quality stuff. While it is double acting or whatever...I still used the same amount as what the recipe called for (I was making a simple soft cheese) and the results were wonderful. My one complaint would be that it would be easier to control the amount of liquid rennet coming out if there was a dropper installed in the cap rather than the container being a squeeze bottle. Though this would make the product easier to work with, it's not going to stop me from ordering from CFH again when I need to.

    I am a first time cheese maker and purchased this item. When I received it I was very disappointed to see that it contains sodium benzoate and caramel coloring. Why? I should have checked the ingredients before I purchased; it just never occurred to me that I would need to be on the lookout for artificial coloring in my rennet. It would cost me more to return it than it's worth, so lesson learned I guess. Order the organic instead; it appears to have cleaner ingredients. That's what I would've ordered but it's not currently available.

    Especially for straining out yogurt and cream cheese, I strongly prefer an unfolded cloth diaper. This has very very thin material, it does not hold up to washing or re-use -- and as such, I found it expensive too. The unfolded cloth diapers I use instead are a good deal thicker, and yet still maintain the bird-eye weave for good draining, are hemmed, and can be re-used hundreds of times. Because that product is available in other places, I find this one a poor expenditure. I'm sorry. :(

    We started making cheese about a year ago when I retired. At first I used an icing spreader to cut the curd. That was fine with 1 gallon of milk but when we started making large amounts it became more difficult. I love the length, the quality and find it to be a good value for the cost.

    I've been looking for a mold like this one simply because it has a well drained bottom on it. Makes it much easier to use than the bottomless hard chees molds than I have been using. It's a perfect size for 4 lb. cheeses, good quality build and plastic and it holds up well under pressure.

    I have used this mold 3 times now. Two hard cheese and one semi-hard. On the hard cheeses (press at 40lbs) and two gallons of milk (1.8 lbs of cheese) it is just a little to big. On the semi-soft cheese and 3 gallons of milk (press at 8 lbs and 3.2 lbs of cheese) it is about the right size.

    These are Mad Millie cheese molds. I make home made cheeses weekly. These molds are by far my favorite. Heavy duty with plenty of draining holes. Closed bottom. The follower (pressing plate) fits well. These are out of New Zealand and are harder to find. The BEST OF THE BEST!!!

    I bought this mold to make feta. I asked before ordering, if the mold would hold cheese made from a gallon of milk, and was assured that it would. The good news is that the curds did fit. The bad news is that there is almost no room for the brine. Also- not sure what I was thinking; feta is made in blocks, not in round containers. Not sure what I will use this for but know that I won't be using it for feta. Response from CFH: Feta is often made in the round container with great results - you actually need very little brine, and you don't want any brine to spill over. Too much brine results in a squishy/mushy cheese, and we sure don't want that! We do hope you'll try again with it!

    I already had 4 of these molds and found them to be very useful for small soft cheese but also realized quickly you need a lot of them even for a small batch. Was making Catamount cheese and need at least 6 and possibly even 8 of these molds to get the proper height for the cheese. Good quality, drain well and sterilize and clean easily.

    Authentic look? The mold may be good for draining feta and other cheeses, but feta traditionally is cut into pieces before it's salted and brined. Response from CFH: Some people like to brine their feta whole...it makes for a pretty presentation if you're selling it or giving it as a gift.
