Our Water Kefir Starter Kit includes:

 

Originating in Mexico, water kefir grains (also known as sugar kefir grains) allow for the fermentation of sugar water or juice to create a carbonated lacto-fermented beverage. Incredibly easy to brew, the starter culture can create a new batch of kefir every 24 to 48 hours. This makes a fantastic non-dairy alternative to milk kefir and can be flavored after brewing to make a variety of delicious sodas. If you are looking to replace soda pop, your family will love it!

Kefir consists of lactic acid bacteria and yeast existing in a symbiotic relationship. The benefits are similar to those of milk kefir (dairy kefir) but the average person will be able to consume larger amounts of it due to its water base. Please note: kefir grains may or may not multiply due to a number of factors but they can be used repeatedly to create wonderful carbonated beverages.

Ways to Use Water Kefir


Water Kefir Grains Ingredients: Water kefir grains, organic rapadura (sugar), water.

Water kefir grains are manufactured in a facility that also processes dairy, soy, wheat, nut, and fish products. Water kefir grains are a vegan starter culture (no animal products).


Shipping Information: Water kefir grains are shipped as a starter culture in a dehydrated state in a barrier-sealed packet and must be rehydrated prior to use. Please keep in a cool dry place until you are ready to make your first batch of kefir.

Each Packet of Water Kefir Grains Contains: 2 teaspoons live active kefir grains in a dehydrated state (will rehydrate to 3 to 4 tablespoons of grains, sufficient to yield 1 to 3 quarts of kefir every 24 to 48 hours).

Why I Love This Product

I like this product simply because it makes my kids giddy to see carbonation and fizz. When too much pressure builds up, the kids are excited to open bottles to see the water kefir explode out of the bottle, as well as where the flip tops land!  But better than that, I am thrilled to know they are getting probiotic benefits when they enjoy a glass of water kefir. We like ours to be as fizzy as possible, so we leave it on the counter until we are ready to drink it. Since we prefer our drinks cold, we solve the issue of room-temperature water kefir by pouring it over frozen blueberries… just using ice would eventually dilute the water kefir, but blueberries make for a delicious treat at the bottom of the glass! Jerri, Customer Support Representative

    • Is there meaning behind the use of a plastic strainer? I have several small metal strainers which are fine mesh. Are the cultures and/or the water kefir not to be in contact with metal?
    • A stainless steel mesh strainer could be used but aluminum is reactive and would cause problems with the grains. It is difficult to tell the difference between a stainless steel and aluminum mesh strainer,. The nylon / plastic mesh strainer is safe for the culture and helps trap small grains.

    • Where does your Kefir come from? Mexico?

      If Kefir is let standing for a month (in a cupboard forgotten about) are the grains finished or can they be activated?

    • Water kefir is thought to have originated in Mexico or Central America. Dehydrated water kefir grains, unopened, will usually be okay for a few weeks at normal room temperatures, but we advise storing them in the refrigerator for best results. Once activated, they must be kept in use or stored in sugar water in the refrigerator.

    • My new water kefir grains have been rehydrating for three and a half days now. I used white sugar. How do I tell when they are ready to use? The liquid is yellow (not dark but def. yellow) and has a slight yeasty smell (like bread dough but not as strong). Does this mean something is wrong? The grains do appear plumper but I am not sure how plump they are supposed to be.
    • We say give it 3 - 4 days to let the culture reactive but not more than 5. The water color should be changing, it sounds like things are going well. You can strain them off now and start a new batch of sweet water for them since its been more than 3 days. Or feel free to wait a day.

      Just remember that sometimes it takes a few batches before the grains are really active.

    • My city water has chlorine added, will this effect the kefir?
    • Unfortunately, chlorine can kill the probiotics that you are trying to work with. If using tap water, we do recommend filtering the water to remove as many additives, chemicals and contaminants as possible. If filtering is not possible, aerating or boiling the water for 20 minutes will generally remove at least the chlorine. Letting the water stand for 24 hours will also let the chlorine evaporate. Chloramines must be filtered.

    • How long can water Kefir or flavored water keep for, otherwise, what is the shelf life? Do you need to refrigerate the finished product?
    • Here are our guidlines for storing Water Kefir:

      At room temperature (68° to 78°F): 3 to 4 days
      In the refrigerator (40° to 45°F): 2 to 3 weeks
      In the freezer (0° to 25°F): 1 to 2 months (like ice cream)
      Storage recommendation: Refrigerate

    • Could you use agave syrup for the sugar?
    • Agave nectar is primarily fructose, and you may get a good fermentation from it, but the grains need glucose to grow and reproduce. Cane sugar tends to give the best results for water kefir. The sucrose of the cane sugar is converted to glucose (used for growth and reproduction) and fructose (which will continue fermenting and produce carbon dioxide).

    • How do these work with fluoridated city water? The filter on our refrigerator is broken, so all we use right now is tap water. I know it is chlorinated and fluoridated.
    • Fluoridated water will not work with cultured foods and is likely to harm the kefir grains. Unfortunately, fluoride is fairly difficult to remove from water even with a standard refrigerator filter. If your tap water is treated with chlorine and fluoride, it is best to purchase water. A store brand spring water sold in the gallon jugs is usually an acceptable solution.     • How about alkaline water (Kangen)? It's processed through a machine but I'm not sure what that entails. Thanks.
    • Water that has been treated to alkalinize it or to change its structure is not suitable for culturing. Culturing involves a precise interaction of bacteria and the food being cultured. If water is part of that culturing process, the natural structure and balance of the water should not be altered. If your water treatment unit has a setting for "clean water" that does not change the pH and does not alter the water structure, but merely filters out contaminants, then the water can be used for culturing.

This water kefir, where has it been all my life?! It's amazing stuff that has resolved a long-term marital dispute - namely, my husband's sugar-drink habit. The compromise we've arrived at for the past half decade is V8 V-Fusion, which is based on carrot and sweet potato juice plus added fruit juice flavors. Although carrots and sweet potatoes might sound healthy, in my view once you remove the fiber it might as well be sugar soda. The resolution: throw water kefir grains directly into V8 V-Fusion and my new SCOBY friends quickly convert the too-sweet levels of sugar into tangy lactic acid, a little bit of ethanol (yay!), and charming champaigney bubbles. Not only more healthy, but skeptical husband agrees: more delicious than the starting material.

Methods: I alternate the grains between a day in sugar water (recipe in the kit) and two or three days in V8 V-Fusion. Sometimes I store the sugar water culture in the fridge for a week or two before pouring the whole culture into a jug of V-Fusion. Once a month I crush up some eggshells, boil them in a little sugar water, then cool and throw them into the culture. The SCOBYs love the eggshells so much they swirl up and down on all the CO2 like it's some kind of party.

One small suggestion: the kit would be more complete if it included a funnel that fits the strainer. I use small-mouth beer growlers and an annoying part about the transfer is that all the funnels I happened to have in my kitchen are either too large or too small for the strainer. At first I was wondering if I really needed everything in the kit or if I could figure out a more thrifty way to scrap this process together. I'm so glad I just made the purchase! The kit arrived at my home surprisingly fast. The instruction booklet was very clear, the strainer is the proper size for mason jars, and I'm feeling quite accomplished with my rotation of jars in the hot water heater closet in our kitchen. This is simply a terrific product! I made it daily for quite some time and eventually decided to give it a rest, and I forgot to add sugar to the water when I refrigerated it. Oops! I will probably order and start up again when the weather gets a little warmer. (I live in Alaska) I make sauerkraut regularly -- and sometimes a "rejuvelac" drink made with cabbage (admittedly an acquired taste). Fermented foods are part of daily life for me, and I have found them to support good health. I really love the kefir made with apple and a little fresh ginger. (Posted on December 27, 2013)

I was very nervous about keeping the grains alive. I am about 3-4 weeks into it. I did a live chat with one of the girls and she helped me understand what the kefir should/may look like and advised some molasses. I had forgotten about the mineral drops that came with the kit, so I have been adding a drop or two to each batch. I am trying my first re-ferment and cannot wait to see if it works out. I am so thrilled with my Water Kefir Starter Kit. I like having pretty much everything I need in one package. The instruction manual is very thorough and easy to follow, with helpful suggestions for improving carbonation. I had never brewed water kefir before and within a matter of days I had my first successful batch. I use Sucanat for my sugar and only add flavor to the second ferment. So far I've made a lemon, cranberry-orange, lemon-ginger, grapefruit and cherry flavored 'soda'. The cherry is my favorite so far - I just use cherry juice. Thanks for making this product available! After recieving some excellent suggestions from Bonnie, I ordered the water kefir kit. It started easily and is easy to keep going.

My grandkids ages 13, 11, 8 love the water kefir and ask for it every time they are here. My 11 year old grand daughter is going to take some started grains home and raise them herself. She is taking the little guys very serious so she should have lots of water to share with her brothers.
