Our Water Kefir Starter Kit includes:

 

Originating in Mexico, water kefir grains (also known as sugar kefir grains) allow for the fermentation of sugar water or juice to create a carbonated lacto-fermented beverage. Incredibly easy to brew, the starter culture can create a new batch of kefir every 24 to 48 hours. This makes a fantastic non-dairy alternative to milk kefir and can be flavored after brewing to make a variety of delicious sodas. If you are looking to replace soda pop, your family will love it!

  • Traditional heirloom-style kefir culture (called "grains" due to appearance); not a powdered starter culture

Kefir consists of lactic acid bacteria and yeast existing in a symbiotic relationship. The benefits are similar to those of milk kefir (dairy kefir) but the average person will be able to consume larger amounts of it due to its water base. Please note: kefir grains may or may not multiply due to a number of factors but they can be used repeatedly to create wonderful carbonated beverages.

Ways to Use Water Kefir


Water Kefir Grains Ingredients: Water kefir grains, organic rapadura (sugar), water.

Water kefir grains are manufactured in a facility that also processes dairy, soy, wheat, nut, and fish products. Water kefir grains are a vegan starter culture (no animal products).


Shipping Information: Water kefir grains are shipped as a starter culture in a dehydrated state in a barrier-sealed packet and must be rehydrated prior to use. Please keep in a cool dry place until you are ready to make your first batch of kefir.

Each Packet of Water Kefir Grains Contains: 2 teaspoons live active kefir grains in a dehydrated state (will rehydrate to 3 to 4 tablespoons of grains, sufficient to yield 1 to 3 quarts of kefir every 24 to 48 hours).

Why I Love This Product

I like this product simply because it makes my kids giddy to see carbonation and fizz. When too much pressure builds up, the kids are excited to open bottles to see the water kefir explode out of the bottle, as well as where the flip tops land!  But better than that, I am thrilled to know they are getting probiotic benefits when they enjoy a glass of water kefir. We like ours to be as fizzy as possible, so we leave it on the counter until we are ready to drink it. Since we prefer our drinks cold, we solve the issue of room-temperature water kefir by pouring it over frozen blueberries… just using ice would eventually dilute the water kefir, but blueberries make for a delicious treat at the bottom of the glass! Jerri, Customer Support Representative

    • If the kefir grains can only culture for max 72 hours, how do I store the grains if I go out of town for longer then the time period mentioned above.
    • To store the grains while you are away, make up a solution of sugar water as if you were going to make kefir, then put a lid on the jar and put it in the refrigerator. The grains will hibernate comfortably for a couple of weeks or more.

    • Why are the Trace Mineral Drops included in the Water Kefir Starter Kit? How are they used?
    • Kefir grains need minerals. A few drops of ConcenTrace while your kefir is culturing is a great way to ensure the grains have proper minerals, especially if your water source has few minerals and you are using white sugar. If you are using well water and a raw sugar, the mineral drops are probably not necessary.

    • The initial quantity is sufficient to culture 1 to 2 quarts per batch. With care, these water kefir grains can be used over and over again, indefinitely. Once they start to reproduce, you can make large quantities at once, or share the grains with friends.

    • Can raw coconut crystals be used for the sugar?

    • Coconut crystals can be used with water kefir, but it's not going to be as good for the grains as cane sugar. If you do use it, make sure you keep an eye on the grains to make sure they're staying healthy. Better yet, try it with some extra grains and see how it goes over time.

    • It's usually no higher than 0.5%, which is less than the alcohol content of fruit juice.

    • What is the reason for a plastic strainer?

      I use water that comes from an underground aquifer; do I need the Trace drops?

    • The fine-mesh strainer is handy for straining the grains from the finished kefir.

      Kefir Grains benefit from water sources with higher mineral content. Some water sources such as well water or spring water can be naturally high in mineral content and are ideal for making kefir. On the other hand, distilled water, reverse osmosis water and water which has been filtered through a activated carbon filter (such as a Britta or Pur filter) often have extremely low or non-existent mineral levels. If using one of these types of water, it is a good idea to add minerals using the Concentrace mineral drops. Otherwise, there is no need to add minerals.

    • I am curious, as a Kombucha maker I am familiar with the need of providing minerals etc for the Scobey through organic whole tea. Would using sweet tea with the water kefir grains be possible?

    • While water kefir grains also need minerals to stay healthy, the minerals usually come from the water and the sugar. You can certainly try flavoring your finished water kefir with your favorite tea once the grains have been removed; however, I do not recommend adding the tea in with the grains, as you may damage the grains.

I made several batches of kefir water but it just tasted like sugar water with juice added. I am not sure if my kefir grains were ever correctly activated. It was too much work and product to have to make every two days. I am going to stick with kombucha and Kvass. For a larger family it might be perfect.

This water kefir, where has it been all my life?! It's amazing stuff that has resolved a long-term marital dispute - namely, my husband's sugar-drink habit. The compromise we've arrived at for the past half decade is V8 V-Fusion, which is based on carrot and sweet potato juice plus added fruit juice flavors. Although carrots and sweet potatoes might sound healthy, in my view once you remove the fiber it might as well be sugar soda. The resolution: throw water kefir grains directly into V8 V-Fusion and my new SCOBY friends quickly convert the too-sweet levels of sugar into tangy lactic acid, a little bit of ethanol (yay!), and charming champaigney bubbles. Not only more healthy, but skeptical husband agrees: more delicious than the starting material.

Methods: I alternate the grains between a day in sugar water (recipe in the kit) and two or three days in V8 V-Fusion. Sometimes I store the sugar water culture in the fridge for a week or two before pouring the whole culture into a jug of V-Fusion. Once a month I crush up some eggshells, boil them in a little sugar water, then cool and throw them into the culture. The SCOBYs love the eggshells so much they swirl up and down on all the CO2 like it's some kind of party.

One small suggestion: the kit would be more complete if it included a funnel that fits the strainer. I use small-mouth beer growlers and an annoying part about the transfer is that all the funnels I happened to have in my kitchen are either too large or too small for the strainer. At first I was wondering if I really needed everything in the kit or if I could figure out a more thrifty way to scrap this process together. I'm so glad I just made the purchase! The kit arrived at my home surprisingly fast. The instruction booklet was very clear, the strainer is the proper size for mason jars, and I'm feeling quite accomplished with my rotation of jars in the hot water heater closet in our kitchen. This is simply a terrific product! I made it daily for quite some time and eventually decided to give it a rest, and I forgot to add sugar to the water when I refrigerated it. Oops! I will probably order and start up again when the weather gets a little warmer. (I live in Alaska) I make sauerkraut regularly -- and sometimes a "rejuvelac" drink made with cabbage (admittedly an acquired taste). Fermented foods are part of daily life for me, and I have found them to support good health. I really love the kefir made with apple and a little fresh ginger. (Posted on December 27, 2013)

I was very nervous about keeping the grains alive. I am about 3-4 weeks into it. I did a live chat with one of the girls and she helped me understand what the kefir should/may look like and advised some molasses. I had forgotten about the mineral drops that came with the kit, so I have been adding a drop or two to each batch. I am trying my first re-ferment and cannot wait to see if it works out. I am so thrilled with my Water Kefir Starter Kit. I like having pretty much everything I need in one package. The instruction manual is very thorough and easy to follow, with helpful suggestions for improving carbonation. I had never brewed water kefir before and within a matter of days I had my first successful batch. I use Sucanat for my sugar and only add flavor to the second ferment. So far I've made a lemon, cranberry-orange, lemon-ginger, grapefruit and cherry flavored 'soda'. The cherry is my favorite so far - I just use cherry juice. Thanks for making this product available!
