Water kefir grains create a carbonated lacto-fermented beverage from sugar water, fruit juice, or coconut water. Incredibly easy to use, the starter culture can create a new batch of water kefir every 24-48 hours. Water kefir makes a fantastic non-dairy alternative to milk kefir and can be flavored to make a range of delicious beverages, or as an ingredient in many recipes. Your family will love it!

  • Rehydration period of 3-5 days required before regular use.
  • Reusable culture; makes up to 2 quarts water kefir with every batch.
  • Cultures on the counter at 68°-85°F.
  • May be used to culture sugar water, fruit juice, and coconut water.
  • Finished water kefir (not grains) may be used to culture non-dairy milks, for a non-dairy milk kefir alternative.

Why I Love This Product

I like this product simply because it makes my kids giddy to see carbonation and fizz. When too much pressure builds up, the kids are excited to open bottles to see the water kefir explode out of the bottle, as well as where the flip tops land!  But better than that, I am thrilled to know they are getting probiotic benefits when they enjoy a glass of water kefir. We like ours to be as fizzy as possible, so we leave it on the counter until we are ready to drink it. Since we prefer our drinks cold, we solve the issue of room-temperature water kefir by pouring it over frozen blueberries… just using ice would eventually dilute the water kefir, but blueberries make for a delicious treat at the bottom of the glass! Jerri, Customer Support Representative

    • My new water kefir grains have been rehydrating for three and a half days now. I used white sugar. How do I tell when they are ready to use? The liquid is yellow (not dark but def. yellow) and has a slight yeasty smell (like bread dough but not as strong). Does this mean something is wrong? The grains do appear plumper but I am not sure how plump they are supposed to be.
    • We say give it 3 - 4 days to let the culture reactive but not more than 5. The water color should be changing, so it sounds like things are going well. The slightly yeasty smell is perfectly normal. You can strain them off now and start a new batch of sweet water for them since its been more than 3 days. Or feel free to wait a day.

Just remember that sometimes it takes a few batches before the grains are really active.

    • Where does your water kefir come from? Mexico?

If water kefir is left standing for a month (in a cupboard forgotten about) are the grains finished or can they be activated?

      Thank you.
    • Water kefir is thought to have originated in Mexico or Central America. Dehydrated water kefir grains, unopened, will usually be okay for a few weeks at normal room temperatures, but we advise storing them in the refrigerator for best results. Once activated, they must be kept in use or stored in sugar water in the refrigerator.

    • Is there meaning behind the use of a plastic strainer? I have several small metal strainers which are fine mesh. Are the cultures and/or the water kefir not to be in contact with metal?
    • A stainless steel mesh strainer could be used but aluminum is reactive and would cause problems with the grains. It is difficult to tell the difference between a stainless steel and aluminum mesh strainer. The nylon / plastic mesh strainer is safe for the culture and helps trap small grains.

    • I am curious, as a Kombucha maker I am familiar with the need of providing minerals etc for the scoby through organic whole tea. Would using sweet tea with the water kefir grains be possible? Thank you! ...Eva
    • While water kefir grains also need minerals to stay healthy, the minerals usually come from the water and the sugar. You can certainly try flavoring your finished water kefir with your favorite tea once the grains have been removed; however, I do not recommend adding the tea in with the grains, as you may damage the grains.

  • From Rachel at 1/10/2013 9:19 PM
    • What is the reason for a plastic strainer?

I use water that comes from an underground aquifer; do I need the Trace drops?

      Thank you.
    • The fine-mesh strainer is handy for straining the grains from the finished kefir.

Kefir Grains benefit from water sources with higher mineral content. Some water sources such as well water or spring water can be naturally high in mineral content and are ideal for making kefir. On the other hand, distilled water, reverse osmosis water and water which has been filtered through a activated carbon filter (such as a Britta or Pur filter) often have extremely low or non-existent mineral levels. If using one of these types of water, it is a good idea to add minerals using the Concentrace mineral drops. Otherwise, there is no need to add minerals.

  • From Chrissy at 12/21/2012 2:02 PM
    • After the water kefir is made, what is a typical alcohol content for the beverage?
    • We do not have information on the alcohol content of finished water kefir. In general, all fermented foods and beverages will have some small amount of alcohol, as that is the natural process of fermented foods.

  • From Susan at 12/15/2012 9:49 AM
    • Can raw coconut crystals be used for the sugar?

      Thank you.
    • Coconut crystals can be used with water kefir, but it's not going to nourish the grains as cane sugar does. If you do use it, make sure you keep an eye on the grains to make sure they're staying healthy. It's best to either alternate batches of cane sugar with the coconut crystals, or perhaps do a combination of both. It's best to try it with some extra grains and see how it goes over time.

    • How many times can you use these kefir cultures (how many batches can you make)?
    • The initial quantity is sufficient to culture 1 to 2 quarts per batch. With care, these water kefir grains can be used over and over again, indefinitely. If they start to reproduce, you can make multiple 1 to 2 quart batches at once, or share the grains with friends.

  • From Seana at 5/20/2012 1:23 PM
    • Why are the Trace Mineral Drops included in the Water Kefir Starter Kit? How are they used?
    • As of the summer of 2014, the Concentrace drops are no longer a part of the kit. It is optional.

However, kefir grains need minerals. A few drops of ConcenTrace while your kefir is culturing is a great way to ensure the grains have proper minerals, especially if your water source has few minerals and you are using white sugar. If you are using well water and a raw sugar, or spring water, the mineral drops are not necessary.

Better than probiotics! Review by Wanda

I bought these for my daughter who was in need of probiotics. It was gonna cost me 50.00 to get her some pills to do her for one month! She showed me kefir grains and I saw the price. The best thing is you can reuse it and it grows if you want more or want to give it to someone. They shipped well and they work well. I used Turbinado sugar and 2 drops of trace minerals per batch and they have grown since I had them. I am glad I made this purchase.

Great Groovy Grains Review by Dotty

My Kefir grains are going to town! Took only a day or two to rehydrate and have been making water kefir ever since. I'm alternating between sucanant and organic cane sugar (which I like best), with a second 1-day fermentation flavored with fresh lemon or lime juice. Lots of fizz and a good flavor. Love the strainer (which I use for milk kefir too) and additional instructions included in the kit.

This was my first time making kefir water and I am very happy with this product. The instructions were very easy to follow with trouble-shooting information which was so helpful. I have been making kefir water for about a month and a half now and each batch has turned out great. I used the recipes in the booklet as a guide and even my 7 year old loves to drink his kefir each morning! Great way to increase probiotics in our diet naturally while avoiding dairy and expensive supplements.

Received the grains just before a ten day out of town trip. Left them in the fridge for about 12 days before I had time to get them going for activation. They were fluffy and active in just under three days! Always great quality from Cultures for Health.

Amazingly Easy and So Good Review by Jen

I'd never had kefir before but wanted a dairy free option and something a little easier than kombucha as a first step into this world of culturing. I love it! I have tried a few different flavoring options. My favorites so far are vanilla (cream soda) and adding lemon juice to make "kefir lemonade". This was amazingly easy to get the hang of and I can't believe how delicious it is!

I love how easy it is to make water kefir even for busy people. The kit contained everything I needed to know from start to finish, to flavoring (or not) through how to rest the gains to take a break from making it (they make a LOT of water). I love it and will make a great gift!

So far I have only good things to say about this product and the service from Cultures for Health. I had technical difficulties online with purchasing the water kefir culture, but the staff at Cultures for Health gave great customer support and processed my order quickly! The water kefir activation took 5 days, but after that I've been able to make a new batch every 1-2 days. It's very easy to make. The only downfall is that you have a24-48 hour window that you need to make the kefir in. It has been a good investment so far! My husband (who tends to be picky with food/drinks) even likes it!

So far so good - on my third batch of kefir water. Flavored the first 2 with lemon, lime, ginger and the 3rd is peach. The kefir is refreshing.

The grains arrived quickly and rehydrated as said. No complaints. For the price, it would have been nice to get enough grain for 2 quarts rather than one.

I absolutely love my water kefir! This is my first time making it and opted for water kefir because dairy does not agree with my husband so we figured this was a safe alternative. We've bought kombucha from our CO-OP but I don't have patience to wait that long for it to ferment!

This water kefir is quick and delicious! My first batch, unfortunately, got mold when I was re-hydrating it but I contacted Cultures for Health and they were very helpful.

Now I've got a great batch of kefir going, have a quick system and a great rhythm to making the batches. Vanilla and lime are currently our favorite! This stuff is great! I hope it grows and multiplies so I can have a few batches going at once!

Great product, great customer service, great company!

I was excited to get started with my water kefir and followed the directions. The kefir grains were perfect, much better than the starter grains I got from a local provider. However, I had to go out of town unexpectedly and for longer than I thought I would be away. Unfortunately, I destroyed my kefir water and had to discard. It was very sad. I will start it again and look forward to enjoying my kefir water soon.

I had in the past tried milk kefir. It was okay, but as I am lactose intolerant, it did not work well for me and my grandkids and family would not have it at all. I was searching online and came across your water kefir and decided to give it a try. And....I love it and so does my grandkids and family. I flavor it up a little for the kids and now everyone get their probiotics on a regular basis. Thanks so much.

Our large family is really enjoying water kefir. It saves us money over buying a lot of juice, pop or lemonade. It is so easy that my 10 year old daughter makes it each day. We flavor it with vanilla extract and it is delicious. My husband told me we should of started making it years ago! After drinking some of our kefir last weekend my mother-in-law quickly placed an order for some of her own grains.

I've had this about 2 weeks now and I'm very pleased. Had no idea it would be so easy. I actually sometimes drink it without anything added or just a little lemon juice. I also juice 2 or 3 times a week and add it to that. The booklet that comes with the kit explains everyting very well and simply. We have well water and I think that also helps with taste. I have called customer service once and they were very polite and answered my question expertly. So glad I decided to try it. Thanks so much.

Easy to use and a great daily drink Review by Sue
Quality

Value

I have been brewing kombucha for several years, but I wanted something to drink every day with low sugar, especially in the summer. It is so easy to make, and you need only 3 ingredients, water, sugar, and kefir water grains - no tea required. I have used plain white cane sugar, Turabindo, Succant and Florida Crystals in the brew. They each produce a different flavor from a slightly sweet taste, to a hint of molasses. I like the basic plain kefir water so much I only use other flavors occasionally when I do a second ferment. I also do a second ferment for a fuzzy drink a couple of times a month. I can make fresh Kefir Water in less than a day. I have also made Kefir Milk (both dairy and coconut, which I put on a grain free cereal, in dressings, smoothies and so on), but I don't use Kefir Milk and Kombucha every day. The Kefir Water kit is a good way to start. The strainer is just the right size, and the instructions are several pages of very clear and complete information, and the grains are easy to use. The instructions include such information as the basic ferment, second ferments, traveling, and longer term storage. This is a great product.
