Water kefir grains create a carbonated lacto-fermented beverage from sugar water, fruit juice, or coconut water. Incredibly easy to use, the starter culture can create a new batch of water kefir every 24-48 hours. Water kefir makes a fantastic non-dairy alternative to milk kefir and can be flavored to make a range of delicious beverages, or as an ingredient in many recipes. Your family will love it!

Why I Love This Product

I like this product simply because it makes my kids giddy to see carbonation and fizz. When too much pressure builds up, the kids are excited to open bottles and see the water kefir explode out of the bottle, as well as where the flip tops land! But better than that, I am thrilled to know they are getting probiotic benefits when they enjoy a glass of water kefir. We like ours to be as fizzy as possible, so we leave it on the counter until we are ready to drink it. Since we prefer our drinks cold, we solve the issue of room-temperature water kefir by pouring it over frozen blueberries… just using ice would eventually dilute the water kefir, but blueberries make for a delicious treat at the bottom of the glass! Jerri, Customer Support Representative

    • How do these work with fluoridated city water? The filter on our refrigerator is broken, so all we use right now is tap water. I know it is chlorinated and fluoridated.
    • Fluoridated water will not work with cultured foods and is likely to harm the kefir grains. Unfortunately, fluoride is fairly difficult to remove from water even with a standard refrigerator filter. If your tap water is treated with chlorine and fluoride, it is best to purchase water. A store brand spring water sold in the gallon jugs is usually an acceptable solution.     • Could you use agave syrup for the sugar?
    • Agave nectar is not a good choice as it will not nourish your grains. You may get a good fermentation from it, but the grains need the nutrients from cane sugar and the water to grow and reproduce. Cane sugar gives the best results for water kefir.

    • How long can water kefir or flavored water kefir keep for - otherwise, what is the shelf life? Do you need to refrigerate the finished product?
    • Here are our guidlines for storing finished water kefir:

      At room temperature (68° to 78°F): 3 to 4 days
      In the refrigerator (40° to 45°F): 2 to 3 weeks
      In the freezer (0° to 25°F): 1 to 2 months (like ice cream)
      Storage recommendation: Refrigerate

    • My city water has chlorine added, will this effect the kefir?
    • Unfortunately, chlorine can kill the probiotics that you are trying to work with. If using tap water, we do recommend filtering the water to remove as many additives, chemicals and contaminants as possible. If filtering is not possible, aerating or boiling the water for 20 minutes will generally remove at least the chlorine. Letting the water stand for 24 hours will also let the chlorine evaporate. Chloramines must be filtered.

    • My new water kefir grains have been rehydrating for three and a half days now. I used white sugar. How do I tell when they are ready to use? The liquid is yellow (not dark but def. yellow) and has a slight yeasty smell (like bread dough but not as strong). Does this mean something is wrong? The grains do appear plumper but I am not sure how plump they are supposed to be.
    • We say give it 3 - 4 days to let the culture reactive but not more than 5. The water color should be changing, so it sounds like things are going well. The slightly yeasty smell is perfectly normal. You can strain them off now and start a new batch of sweet water for them since its been more than 3 days. Or feel free to wait a day.

      Just remember that sometimes it takes a few batches before the grains are really active.

      If water kefir is left standing for a month (in a cupboard forgotten about) are the grains finished or can they be activated?

    • Water kefir is thought to have originated in Mexico or Central America. Dehydrated water kefir grains, unopened, will usually be okay for a few weeks at normal room temperatures, but we advise storing them in the refrigerator for best results. Once activated, they must be kept in use or stored in sugar water in the refrigerator.

    • Is there meaning behind the use of a plastic strainer? I have several small metal strainers which are fine mesh. Are the cultures and/or the water kefir not to be in contact with metal?
    • A stainless steel mesh strainer could be used but aluminum is reactive and would cause problems with the grains. It is difficult to tell the difference between a stainless steel and aluminum mesh strainer. The nylon / plastic mesh strainer is safe for the culture and helps trap small grains.

    • I am curious, as a Kombucha maker I am familiar with the need of providing minerals etc for the scoby through organic whole tea. Would using sweet tea with the water kefir grains be possible? Thank you! ...Eva
    • While water kefir grains also need minerals to stay healthy, the minerals usually come from the water and the sugar. You can certainly try flavoring your finished water kefir with your favorite tea once the grains have been removed; however, I do not recommend adding the tea in with the grains, as you may damage the grains.

    • What is the reason for a plastic strainer?

    • The fine-mesh strainer is handy for straining the grains from the finished kefir.

      Kefir Grains benefit from water sources with higher mineral content. Some water sources such as well water or spring water can be naturally high in mineral content and are ideal for making kefir. On the other hand, distilled water, reverse osmosis water and water which has been filtered through a activated carbon filter (such as a Britta or Pur filter) often have extremely low or non-existent mineral levels. If using one of these types of water, it is a good idea to add minerals using the Concentrace mineral drops. Otherwise, there is no need to add minerals.

This is a new beverage for me to make and I chose to try this because I needed to get more liquid in my body thus improving my health. I am totally satisfied with the results I've had in making water kefir without having done a second fermentation. I find my batches have enough bubbles for my taste. I use Rapadura or Sucanat with purified water when I make this drink. The amount of grains doubled fairly soon so I make 2 batches each time I brew it.

I am new to making kefir of any sort. Thought I would try my hand at making water kefir first. So glad I did! The grains are good quality and I've been successfully making water kefir now for three weeks! My water kefir comes out bubbly and wonderful. My grains are healthy and doing well. The how-to videos on this site are very informative. I recently had a question and chatted online with a customer service rep, they were super helpful and it felt great being able to lean on their knowledge, since I'm a newbie.

so far so good. we are enjoying the water kefir. got off to a slow start because my house is cold, but the culture seems to be thriving now.

im a bit disappointed in the 'kit' as i already have strainers, and really bought it for what i thought was a booklet of recipes but was just basic instructions and one or two very basic recipes. many, better recipes are available on various blogs and web searches, so the kit is a waste of money IMO.

the actual grains are working out nicely even though they sat at the post office a few days, and endured a very cold oregon spring.

So much fun! I haven't tried it plain but LOVE the 2nd ferment.. I've tried cream soda made with vanilla flavor.. Cherry/lemonaid using frozen cherries and the juice of 1/2 a lemon... another made with tart cherry concentrate and lemon..and Lemon/Ginger! I have been making 8 cup batches and was able to share and get others hooked as well! My grand kids love it!

All my kids love the kefir water. They call it soda pop and drink whatever I make within one day. The instructions were easy to follow and I have made several times over and can do it in my sleep. My families favorite flavor is the vanilla. It tastes like cream soda and it is so easy to do.

We've been enjoying kefir off and on for nearly ten years with grains we've sourced for free locally and through the mail. I finally decided to buy grains and I do not regret it.

Though they do not seem to be multiplying after several weeks, they are otherwise doing quite well and we are very happy with the fizzy finished product after a second fermentation.

Everyone in the family loves to drink the water kefir and my 3- and 7-year olds beg for more!

We made water kefir for the first time two weeks ago and everything turned out great. The directions are very clear on every step that you need to do and are very easy to follow. Our family didn't take very well to milk kefir and I wanted a healthy drink alternative to commercial sodas and fruit drinks. Water kefir fits the bill. It is so easy to make and is easy to flavor. Our family of six goes through about 1.5 gallons a week. The kids love coming up with new flavors and whether it should be spritzy or not. I will definitely buy any fermenting starters or supplies from Cultures for Health in the future.

we tried making kombucha but my husband didn't really like it. i bought some grape water kefir ($6 per bottle!!) and he liked it. So, here we are. We just started with water kefir and we are experimenting with different juices and second ferments. That's what makes it so good. Also, To make it a bit fizzy, make sure that your second bottle is as close to full as possible, with a bit of room at the top.
If you notice that it 'upsets your stomach' back off a bit and increase slowly.
