Water kefir grains create a carbonated lacto-fermented beverage from sugar water, fruit juice, or coconut water. Incredibly easy to use, the starter culture can create a new batch of water kefir every 24-48 hours. Water kefir makes a fantastic non-dairy alternative to milk kefir and can be flavored to make a range of delicious beverages, or as an ingredient in many recipes. Your family will love it!

Why I Love This Product:

Water kefir is one of my favorite cultured foods. Water kefir is particularly easy to make; I generally spend about 5 minutes every 48 hours to make it. Since it's commonly made with sugar and water, it's also a very inexpensive beverage. While there are several types of cultures available for making kefir, I prefer to use water kefir grains because they are resusable and sustainable.     • Hi, I just activated my kefir yesterday, and I used gauze with rubber band to cover it, however today I found the top layer of the water had some tiny fibers ,and I believed that came from the gauze....do I need to change the whole water? If I use parchment paper with rubber band to cover it, ist ok? Does kefir need oxygen? How do I know if the kefir is activated? Thank you.
    • The gauze should work well and rinsing it before use might help remove any stray fibers. Coffee filters also work very well without any lint or fibers. Use a small nylon mesh strainer to remove the fibers or rinse your grains before starting your new batch. We recommend using a loose fitting lid, coffee filter or tea towel for first fermentation to allow the carbon dioxide to escape. Depending on the temperature in your culturing area, your kefir grains will be active in 3 to 5 days and the grains will begin processing the sugar. You will know the grains are working by the flavor of your finished kefir. It should be slightly sweet with a lightly fermented (tangy, sour) flavor.

    • I'm concerned about the safety of the second fermentation -- what prevents botulism or other toxic organisms in the anaerobic (sealed lid) phase?

      Also, how much do I need to worry about bottles exploding?
    • Pathogens will not exist in competition with the good bacteria in the finished water kefir, provided it has been appropriately cultured in the first ferment and stored in the second ferment. When there is an abundance of good bacteria versus bad bacteria, the good will win.

      You do need to always check your bottles for cracks before you use them. Most people successfully do second ferments with no issues, but it does happen on occasion that a bottle will have problems. Ferment for only 1-3 days, taking note of warmer temperatures during the late spring and summer months. The same juice or fruit you ferment for flavoring with in the winter for 2-3 days may only take 1-2 days in the warmer months. Please contact Customer Support for more assistance.

    • If I purchase water kefir grains during the summer, will the hot weather hurt them during shipment?
    • The cultures should be fine during shipping. We do send you an e-mail with tracking information once the package leaves our warehouse, so that you'll have an idea of when to expect delivery. Although most carriers are usually accurate, there have been occasions of packages arriving earlier than the estimated date, so be sure to check before as well. The best thing to do is get the cultures in the refrigerator as soon as possible after delivery. Avoid allowing the package to sit in a hot mailbox or out in the sun all day. Maybe have a neighbor pick up the package, have it shipped to your workplace, or even leave a cooler out for the mail carrier, as some customers do. We do not offer refrigerated shipping, but we do ship all over the country, year round, and have very few failures due to heat. Of course, if you have any problems with your culture, we ask that you contact our customer support for assistance.

    • Many places on the web state that adding vanilla extract for the second ferment will give a Cream Soda taste to the kefir. Am I wrong in thinking that the alcohol in the extract would kill off the probiotics in the kefir?
    • The amount of vanilla used is small, but may harm some of the bacteria. Using an alcohol free vanilla extract would be the best choice.

    • I have some water kefir grains which I bought recently and have been using for about 10 days. They seem to have gone quite mad and have multiplied beyond anything I was expecting! I've tried eating some of them, but they still seem to be multiplying. Even after eating half of them, I've still got about 10 times what I started with. Is this normal? The water kefir they are producing looks and tastes fine, by the way.
    • Some people experience a lot of grain growth and reproduction, others do not. Both extremes and everything between is "normal". The important thing is that they are making delicious kefir. You can dehydrate some of your extra grains to save as a backup, blend them up in a smoothie, mix them in with the soil for plants, compost them or share them with your friends.

    • I added minerals to my kefir instead of sugar in the past, and I think it worked...Have you ever heard of this, and do you think the kefir would eventually die without sugar? I am hoping to order some more grains soon, but I am trying to cut sugar out of my diet. Even though a lot of the sugar is "eaten," I am still afraid there is quite a bit still in it. Thanks!
    • The grains require food and a small amount of minerals. Although the grains may be able to culture a batch or two without food (sugar), they will soon become damaged and eventually die. You might want to experiment with a second fermentation to allow the yeast and bacteria in the finished kefir to consume more of the sugar without damaging the grains.     • If I can use 1/4 cup of finished water kefir to culture coconut milk, can I also use 1/4 cup of finished water kefir to culture coconut water?

      Would I be able to use 1/4 cup of the same cultured coconut water to culture another batch of coconut water?
    • Yes, you can use the finished water kefir to culture coconut water! It is possible you can culture another batch from this, but the bacteria weakens with each batch further from the grains. You can experiment to see!

    • I continue to observe the same reference of 3-4 tablespoons of W(ater) K(efir) grains for every 1-2 quarts. If I can use 3 tablespoons of WK grains for 2 quarts, does that mean I can use as little as 1.5 tablespoons of WK grains for 1 quart?
    • The grains work best in a community of at least 3-4 Tablespoons. That would be the minimum. 1 1/2 Tablespoons may not be enough to support a healthy brew, even though it appears mathematically the ratio would work.

Just bought your water kefir grains. Bought your milk grains from our health food store. Both products are easy to use and everyone loves them. I would recommend this product to everyone. My milk kefir grains started working after 3 days so now we are the road to better health. Thank you again.

It is SO easy to use these water kefir grains, I have been using mine for over 2 weeks now and have a quart of fresh water kefir every 30 hours or so, just perfect timing since my previous batch has been consumed. I started using white sugar but after a few batches tried organic blackstrap molasses and love this. My latest batch has dried apples and candied citrus peel as an extra along with the molasses. I LOVE THIS!!!! Try it, you'll like it!

CFH note ~ White sugar does not include minerals that the grains need, adding black strap molasses or a pinch of sea salt is usually a great idea unless your water source already has a lot of minerals. Too many minerals can cause the grains to break into small pieces. Dried apple and candied citrus peel sounds like a wonderful combination for that second fermentation!

After years on probiotics and anti-fungal medicine, my child on the spectrum is now able to balance the yeast and bacteria in his gut by drinking this sweet, delicious beverage twice a day. I'm not sure what I expected, it seems like such a foreign concept, but the videos I watched made it so simple. We are now culturing water kefir every day and enjoying it straight as well as with added organic fruit juice. Every question I had when we were getting started was quickly and graciously answered by the staff at Cultures for Health. We were so happy with the water kefir, that we ordered other products as well. It's wonderful that something that tastes SO good can make one's life better. We are delighted with this company.

I enjoy my kefir water. I have ordered twice from Cultures for Health (killed one batch doing something dumb) so I ordered again after a move. I missed my kefir water when I was out. I just feel better when I consume this. The grains rehydrated well and they are easy to maintain. I mix kefir water in my green smoothies for an even healthier smoothie. I'm interested in trying to culture kombucha, as I enjoy that also, but have some trepidation--seems like kefir water is easier to maintain. For now, I'll stick with this!

I tried to get my kids to like homemade milk kefir. Really tried. It didn't work. But, they are drinking (and liking) the lemonade water kefir now. I am so excited about this. I haven't even been making it that long. My grains have taken off quickly since rehydrating them. I use organic sugar and then add concentrace drops and 1/4 of a clean egg shell for minerals. This produces an easy to flavor kefir water that can easily be combined with juice or made into lemonade for picky kids.

I made a batch of wk for the first time this week. I don't know what I was expecting, but I was pleasantly surprised. The taste is sweet, but not overly so. Even my 13-year old said he loved it! We are going to implement this drink to help with gut issues. So glad I found this company.

I have been making water kefir for only about a month. I have watched the videos and looked at the recipes. I have flavored with organic blueberry/cranberry juice, which I love. I also tried pineapple ginger today. Can't wait to taste it. I have not noticed that my grains are multiplying though. Maybe I haven't had them long enough? I have been drinking it with no fizz, but just bottled some to see if it will work for me. It has been great fun trying new things.

I've already reviewed this item, but some more time has passed and I wanted to add some comments. First, this is a great way to start culturing, if you are new to it, because it is so simple: dissolve sugar in water, let cool, add grains, repeat every fe days. Also, you can make great flavors - my favorite is: juice one orange, one lime, one lemon and add to your prepared kefir water. It is wonderfully refreshing, very hydrating, and for my household it's a substitute for sodas and too-sugary juices. Note that if you kefir grape juice (look for the recipes on this website) it will turn the grains dark, and it will slightly color the next several batches of plain water kefir.

We recently moved to Arizona and I started making water kefir as a way to keep the kids and husband hydrated - and it has become a staple in our kitchen. Our favorite flavoring is lemon juice, but we also make a lot of grape, and a few other flavors. It's refreshing, delicious, and makes us feel good! Note: if you can't have ANY sugar, I would try the dairy kefir.

Im 60 years old. I have had extreme pain in both of my hands for years. A few years ago my daughter mailed me some grains. I put them in a jug and added water and sugar. let them sit for a few days with an apple and drank it. Tastes bad. The next morning i went to the bathroom in high fashion.

After a few days i noticed that my hands didnt hurt. I also noticed i was making award winning deposits in the bathroom. I used those grains for about 1.5 years. I noticed that if i stopped drinking for a day, the next day my hands hurt and i didnt visit the hall of fame every morning.

SO i order more these grains about 1.5 years ago and added them to the existing grains and moved them into 1 gallon jars.

I figured out quick that time and temp are important. Tastes great now.

I am in no way a health freak. If its bad for you i eat it. I dont exercise at all. and im a smoker.

Bought these last month but didn't use them right away, so I put them in the fridge until about two weeks ago, when I began the rehydration process.

The steps were clear and simple, and within a few days my grains were kefiring the water just fine. I'm still trying to find the best additives to make kefir "soda" since it sounded like a neat project, and have tried prune, apple, and cranberry juices, raisins, and vanilla extract, but so far no luck with finding a taste I care for.

However, my little nephew LOVES the water kefir mixed with a little apple juice (no 2nd ferment), and has now started requesting it.

Also, about a week ago, I noticed that some of my water kefir grains were floating and thought they were bad, so I ended up tossing the floaters out. I saw it again the next morning and worried that something was wrong, so I contacted a CFH customer service agent by chat via the website, and she assured me that it was the exact opposite; that my grains were fine and that I should not toss them out just because they float, as that is a sign that the grains are happy and healthy. :D

Anyway, I'm pleased with the purchase and love the knowledgeable, and always helpful, customer service! :)

I have had a lot of experience with kefir grains. Both here and Australia.
These grains were not viable and after more than a week I threw them out.

Response from CFH: Please contact Customer Support before discarding cultures. Some cultures are salvageable with minor adjustments.

I had never tried water kefir and I was very intimidated by it. I knew it would be healthy but the concept was just weird but I thought "Hey it's healthy - why not try it. I am using coconut/palm sugar since I kicked white sugar to the curb, and since it is brown, it made my water kefir look a little unappetizing. I got up the nerve to taste it and surprise, it is good. I now add it as a sweetener to my ice tea and I like the taste of it. My grains are happy and multiplying and my husband and I are also happy with this healthy, probiotic drink. My husband and I both feel better so this has been a positive experience. Thanks to Cultures for Health for offering such great products.
