Water kefir grains create a carbonated lacto-fermented beverage from sugar water, fruit juice, or coconut water. Incredibly easy to use, the starter culture can create a new batch of water kefir every 24-48 hours. Water kefir makes a fantastic non-dairy alternative to milk kefir and can be flavored to make a range of delicious beverages, or as an ingredient in many recipes. Your family will love it!

Why I Love This Product:

Water kefir is one of my favorite cultured foods. Water kefir is particularly easy to make; I generally spend about 5 minutes every 48 hours to make it. Since it's commonly made with sugar and water, it's also a very inexpensive beverage. While there are several types of cultures available for making kefir, I prefer to use water kefir grains because they are resusable and sustainable.     • If I purchase water kefir grains during the summer, will the hot weather hurt them during shipment?
    • The cultures should be fine during shipping. We do send you an e-mail with tracking information once the package leaves our warehouse, so that you'll have an idea of when to expect delivery. Although most carriers are usually accurate, there have been occasions of packages arriving earlier than the estimated date, so be sure to check before as well. The best thing to do is get the cultures in the refrigerator as soon as possible after delivery. Avoid allowing the package to sit in a hot mailbox or out in the sun all day. Maybe have a neighbor pick up the package, have it shipped to your workplace, or even leave a cooler out for the mail carrier, as some customers do. We do not offer refrigerated shipping, but we do ship all over the country, year round, and have very few failures due to heat. Of course, if you have any problems with your culture, we ask that you contact our customer support for assistance.

    • Many places on the web state that adding vanilla extract for the second ferment will give a Cream Soda taste to the kefir. Am I wrong in thinking that the alcohol in the extract would kill off the probiotics in the kefir?
    • The amount of vanilla used is small, but may harm some of the bacteria. Using an alcohol free vanilla extract would be the best choice.

    • I have some water kefin grains which I bought recently and have been using for about 10 days. They seem to have gone quite mad and have multiplied beyond anything I was expecting! I've tried eating some of them, but they still seem to be multiplying. Even after eating half of them, I've still got about 10 times what I started with. Is this normal? The water kefir they are producing looks and tastes fine, by the way.
    • Some people experience a lot of grain growth and reproduction, others do not. Both extremes and everything between is "normal". The important thing is that they are making delicious kefir. You can dehydrate some of your extra grains to save as a backup, blend them up in a smoothie, mix them in with the soil for plants, compost them or share them with your friends.

    • I added minerals to my kefir instead of sugar in the past, and I think it worked...Have you ever heard of this, and do you think the kefir would eventually die without sugar? I am hoping to order some more grains soon, but I am trying to cut sugar out of diet. Even though a lot of the sugar is "eaten," I am still afraid there is quite a bit still in it.

    • The grains require food and a small amount of minerals. Although the grains may be able to culture a batch or two without food (sugar), they will soon become damaged and eventually die. You might want to experiment with a second fermentation to allow the yeast and bacteria in the finished kefir to consume more of the sugar without damaging the grains.     • If I can use 1/4 cup of finished water kefir to culture coconut milk, can I also use 1/4 cup of finished water kefir to culture coconut water?

      Would I be able to use 1/4 cup of the same cultured coconut water to culture another batch of coconut water?
    • Yes, you can use the finished water kefir to culture coconut water! It is possible you can culture another batch from this, but the bacteria weakens with each batch further from the grains. You can experiment to see!

    • I continue to observe the same reference of 3-4 tablespoons of W(ater) K(efir) grains for every 1-2 quarts. If I can use 3 tablespoons of WK grains for 2 quarts, does that mean I can use as little as 1.5 tablespoons of WK grains for 1 quart?
    • The grains work best in a community of at least 3-4 Tablespoons. That would be the minimum. 1 1/2 Tablespoons may not be enough to support a healthy brew, even though it appears mathematically the ratio would work.

      Finished water kefir lasts in the refrigerator for 2-3 weeks. The kefir will continue to ferment slowly, and the flavor will continue to develop and get stronger over time.

    • After you rehydrate the grains, what do you do with the liquid that was used to rehydrate? Is it drinkable or should it be disposed of or what?
    • The liquid (sugar water) from the activation batch should be discarded as it is not cultured.

Bought these last month but didn't use them right away, so I put them in the fridge until about two weeks ago, when I began the rehydration process.

The steps were clear and simple, and within a few days my grains were kefiring the water just fine. I'm still trying to find the best additives to make kefir "soda" since it sounded like a neat project, and have tried prune, apple, and cranberry juices, raisins, and vanilla extract, but so far no luck with finding a taste I care for.

However, my little nephew LOVES the water kefir mixed with a little apple juice (no 2nd ferment), and has now started requesting it.

Also, about a week ago, I noticed that some of my water kefir grains were floating and thought they were bad, so I ended up tossing the floaters out. I saw it again the next morning and worried that something was wrong, so I contacted a CFH customer service agent by chat via the website, and she assured me that it was the exact opposite; that my grains were fine and that I should not toss them out just because they float, as that is a sign that the grains are happy and healthy. :D

Anyway, I'm pleased with the purchase and love the knowledgeable, and always helpful, customer service! :)

I have had a lot of experience with kefir grains. Both here and Australia.
These grains were not viable and after more than a week I threw them out.

Response from CFH: Please contact Customer Support before discarding cultures. Some cultures are salvageable with minor adjustments.

I had never tried water kefir and I was very intimidated by it. I knew it would be healthy but the concept was just weird but I thought "Hey it's healthy - why not try it. I am using coconut/palm sugar since I kicked white sugar to the curb, and since it is brown, it made my water kefir look a little unappetizing. I got up the nerve to taste it and surprise, it is good. I now add it as a sweetener to my ice tea and I like the taste of it. My grains are happy and multiplying and my husband and I are also happy with this healthy, probiotic drink. My husband and I both feel better so this has been a positive experience. Thanks to Cultures for Health for offering such great products.

I am not a sweet eater so most of the kefir grains go to making coconut water kefir. Just plop them into coconut water and let it sit a few days. Drain them out and drink for a refreshing, rehydrating drink. I've yet to try fruit juices or any kind of ginger drink with it as I just throw out the sweet water kefir makes. Shame on me. I wonder if you could kefir tea and sugar mixture as in kombucha. I'm still uneasy on how to handle the little gems to keep them viable. I'm glad of your ebooklets on kefir and kombucha for all the information needed.

I decided to try this product because I didn't want to keep taking over the counter probiotics. I love the lemonade and can't believe it taste just like lemonade! It's so easy to make and hard to not drink it all the time. I currently am experimenting with a bottle of pineapple soda. I've also tried adding ginger to the lemonade..Yum! Once I finish my supply of organic sugar, I'll be trying the rappadura sugar to see how that taste.

Easy DIY instructions condition excellent healthy Grains, rehydrate first time 2 days, 4 batches in two weeks. Let grains rest with plain sugar water and drop of Concen Trace Drops 2 Days, rinsed and back to another batch.This time added Brown Sugar, Black Strap molasses and they are off and running. Fun watching them grow,creating bubbles, and float back to bottom when disturbed. Like they are in military formation. Now if i could get them to multiply better for bigger batches and more Co2 fizz. Next will try Kombucha Tea. Just having a blast growing Kefir Water and talking with friends and acquaintance big smile, people are amazed to hear me talk about and show them the results and steps of Kefir Water and Grains...Thanks you all for sharing, John

My husband and kids love the kefir water. I kefir a half gallon for my family every couple of days or so. We flavor it with a couple tablespoons of raisins. My kids rarely get any because my husband loves it so much, he typically drinks it all. This culture is so easy to maintain, and very hard to kill. My husband actually ate half of the grains one evening because I had the grains in sugar water in the fridge hibernating while we were away on vacation, he thought it was in the fridge for drinking, so he did. The few grains I had left have reproduced within a month and I'm back to kefiring bigger batches of water. Thanks!

Very pleased with the grains I received. Was using whey to carbonate beverages but these grains are amazing at creating effervescent and nutritious beverages. The initial sip my 16 year old took of the bubbly concord grape juice was "No way don't like it" but then she immediately to a second reflexive sip and proclaimed, "I love this!" :) Yes it is possible to make healthy sodas that also deliver essential probiotics.

As a doctor, I'm always looking for options to share with my patients. I'm only disappointed I didn't find out about water kefir earlier! It's been so much fun making various "sodas," which have significantly helped people wean off the nasty stuff all while getting an easy introduction to the world of fermentation. I love it! So far I've made cherry vanilla, ginger lemon and blueberry and I'm so excited to explore more flavors! These cultures are quality. Even in a cold kitchen, my water kefir is ready in a day.
