Vegan Yogurt Starter Culture

I've made three batches so far, all using EdenSoy organic unsweetened milk and a Cuisinart yogurt maker. The first batch I thickened with cornstarch (no sweetener) and cultured for 8 hours. I was thrilled to get real, good tasting yogurt, but it was actually stiffer than I prefer. Not very tangy, either. So the next batch I skipped the thickener. I was delighted with the texture this time -- plenty thick enough for me, certainly not soupy. But still, not very tangy. So with the next batch I increased the culture time to 9 hours. Same result. I guess that I'll just keep increasing the culture time until I hit the limit and curdle it, just to see if I can increase the tanginess. But overall, I'm more than satisfied to get something so good tasting. I really missed my yogurt after going vegan a couple of years ago. I usually add it to a simple oatmeal muesli, let it sit and soften the oats for 30 minutes or so, and then add some walnuts and berries for a great breakfast.
