I am allergic to casein so I did noy have to worry about this culture. I have only made one batch of yogurt since the vegan video was not working.I was pleased. I also accidentally mixed some of my probiotic caps with the mix which they say you should not do.
Anyway I was hoping to not use sugar but you do need sugar or honey for bacteria to work. I added anise and it tasted nice. I was also told that pectin worked better than agar or guar gum. I only added 1/2 teaspoon and next time I will add a tad more since there qas a little liquid in the bottom of the week old yogurt. They could have mailed this with an ice pack since it was so delicate- they don't . so I don't know if that made a difference.
