Details

Terra Alba consists of finely pulverized food-grade Gypsum. It is the traditional coagulant for Chinese tofu.  Made of naturally occurring calcium sulfate, it is preferred by many to coagulate soy milk to make tofu as it is a delicious source of dietary calcium.  Terra Alba tends to make a softer smoother tofu than Nigari.

Terra Alba can be used alone or in combination with Nigari Flakes or Liquid Nigari to add calcium.

Each Package Contains: 1 lb. (454 g.) Terra Alba (Gypsum); one pound of Terra Alba is sufficient to make approximately 100 lb. of tofu

I got this for Tofu making. As the description says, it seems it makes softer tofu.
It doesn't dessolve well into water and you feel the texture in Tofu. I couldn't eat as is but okay for deep fry Tofu.
If you want extra calcium in Tofu and don't mind some sandy texture, this may be okay product, but if you are expecting silky texture and firmness, better stay with regular Nigari. (Posted on February 10, 2014)
