I didn't know what to do with all the kefir I started getting, so I made the cheese. The cheese is unbelievably good. I spread some on toast with a topping of a little marmalade, and I'm good until lunchtime. I also add a tablespoon of the cheese to eggs for scrambled eggs -- makes them really fluffy and rich.
