Terra Alba

Terra Alba consists of finely pulverized food-grade Gypsum.  it is the traditional coagulant for Chinese tofu.  Made of naturally occurring calcium sulfate, it is preferred by many to coagulate soy milk to make tofu as it is a delicious source of dietary calcium.  Terra Alba tends to make a softer smoother tofu than Nigari.

Terra Alba can be used alone or in combination with Nigari Flakes or Liquid Nigari to add calcium.

Each Package Contains: 1 lb. (454 g.) Terra Alba (Gypsum); one pound of Terra Alba is sufficient to make approximately 100 lb. of tofu
