New England Sourdough Starter

I'm a really bad sourdough mom. I am an avid baker, but life gets in the way--sometimes a lot. I enjoyed this mild, yet super powerful starter (I've never worked with one so robust before!) for a few months, and then kids and work and general crazy took over and it found itself languishing at the back of my fridge, unfed. I couldn't bring myself to toss it. When I cleaned the fridge, I would smell it and throw out the excess dark water at the top, and it smelled good still. So back in the fridge it went...starving for over a year. Finally, I got up the guts to test it to see if it was really dead. I pulled it out, got it a clean jar and fed it. WOW! It went nuts. Two feedings and it was ready to party. I made a beautiful loaf that night. It's bubbling along happily now, and I know I can't kill it.
It has a mild, not very sour taste. My older kid wants a more sour bread, so I'm adding in a San Fransisco to the rotation soon. But this is great for sourdough that tastes like regular yeast when you don't want all the tangy flavor.
