New England Sourdough Starter

- This is not my first experience with sourdough - I have made my own before, and have received starters from a friend as well. It is my first experience here however - and it has been a little different. I am not hugely learned in sourdough yet, but in the past - I have always kept my sourdough very wet. The directions for this sourdough keeps it very dry - it is very doughy. This is because of the 1:1:2 ratio (starter:water:flour). It was kind of hard to get used to at first because it is difficult to stir, however the end product turns out beautiful every time. I have made pizza dough, bread, tortillas, pancakes and cookies so far and all turned out wonderful. One thing I've found different about this sourdough than my past, is that when I want a really "sour" dough - it takes forever, and then it really isn't even as sour as I'd like. My past sourdough starters only took about 24 hours of sitting to turn out a very sour dough. This one is just very mild. It is sour - don't get me wrong, but not in a strong way. I'd like to purchase the San Fran starter next just to have something a little stronger in flavor sometimes. Great starter though!
