Savory Sourdough Fritters


Fritters are a sort of filled donut, where a vegetable or fruit is encapsulated in batter with sweet or savory seasonings and then fried until golden in delicious fat.

Savory, they can be served with your favorite condiments such as salsas, chutney, or sauce. Sweet they can be sprinkled with powdered sugar or drizzled with honey or chocolate.

These savory fritters can make the most of your summer garden harvest. Use corn, shredded sweet potato, or a combination of corn and peppers. Spice it up with curry or chili powder and serve with something fresh to cut the fat.


  • 3 cups corn kernels or other vegetable combination (sweet potato, corn and peppers, etc.)
  • 1 cup sourdough starter
  • 1/2 teaspoon sea salt plus more for seasoning
  • 1/2 teaspoon chili or curry powder
  • 1/4 teaspoon baking soda
  • Coconut oil, lard, or tallow for frying (about 1 to 2 cups)


Place vegetables in a large bowl. Pour in sourdough starter slowly, mixing it into the vegetables as you go. The starter should envelop the vegetables but still remain thick. If this hasn’t yet been achieved add a bit more sourdough starter.

Sprinkle in salt, spices, and baking soda, and mix to combine. Allow mixture to rise a bit while heating the fat in a 10-inch skillet over medium-high heat.

Gently drop batter into fat. Fry for approximately 3 minutes per side until golden. Flip, then fry another 3 minutes or until golden.

Remove to a platter and sprinkle with salt. Serve with a lacto-fermented salsa or a fresh tomato sauce.
