Danish Rye Sourdough Starter

The Danish Rye Sourdough starter is by far the best starter I've worked with. I can be a little neglectful at times and this starter can take it. It seems to work at a much slower (read: you made need to allow more time for things to rise) rate than other starters I've tried, but it doesn't go as sour as quick either. I've definitely abused it and after refreshing it bounces right back. I use Great River Organic Milling Rye flour that I buy in 25# bags, which last me around 4 months. Can't say enough good things about this starter and even though I've mostly dabbled in pancakes and quick breads, I am working my way up to some loaves of bread soon.
