What is a Direct-Set culture?  Direct-Set cultures are a one-time-use culture, they cannot be recultured (i.e. perpetuated beyond the single batch).  Direct-Set cultures are often preferred by cheese makers as they require no maintenance or care.  Simply keep the packet in the freezer and remove the portion for your recipe when it's time to make cheese. Most Direct-Set cultures contain multiple doses to inoculate multiple batches.

    • My cheddar recipe says to use "one packet" of mesophilic starter. What would that translate to for this starter (in tsps)?
    • We do not have teaspoon measurements, but this culture requires 6.25-7.5 DCU or about 0.9-1.1 grams for every 100 Liters milk. This culture is designed for larger batches. For smaller batches, try the Mesophilic Direct-set Starter Culture.

    • Will opening the package multiple times (if I am only using 2 gal of milk at a time for cheese making) will it affect the quality of the culture? And, what is the difference between R 22 and the mesophilic culture that comes in smaller packages (besides the size of the pkgs)?
    • Opening the package multiple times will introduce humidity into the package. If you will be making several smaller batches, we recommend using the mesophilic culture that comes in individual packages.
      The RA 22 is a slightly different strain of bacteria, however both products can be used interchangeably for most cheeses.

    • This culture works beautifully with raw goat, cow or sheep milk.

    • how much RA22 culture should be used in 2 gallons of whole milk? A spoon measurement would be helpful. Example 1/4 tsp.....1/8 tsp.....
    • The measurement will likely vary between recipes. The recipe itself should provide the exact measurement.

    • How many gallons of milk with this packet inoculate? Or how much powdered culture does it contain?
    • The 125 DCU packet contains enough culture to inoculate about 185 gallons of milk. It contains 18.3 grams of culture.
