    • This book contains a collection of recipes or methods of preserving produce collected from individuals in the Terre Vivante region of France. Each selection is printed as given from the individual. The book contains sections on using salt, oil, sugar, alcohol, vinegar, drying, cold storage, and lactic fermentation, to preserve the harvest. Each selection is for a specific food, and some selections do not give detailed instructions, but are presented as written by the contributor.

fascinating but intimidating Review by Amanda

This book was exactly what I was looking for. There are lots of wonderful suggestions of what to do with common food items as well as recipes for things which I had never thought to preserve. When my copy arrived in the mail, I honestly ate up the entire thing like a good novel. It does take a little bit of bravery to try the recipes because there aren't often exact measurements or even times given as many of us are used to having in a recipe. However, I've found it a delightful and deliciously rewarding adventure to practice the methods found in this book. I would definitely recommend it for anyone who is trying to learn about preserving food while avoiding canning and freezing.
