Pile 2 or 3 tablespoons of grated parmesan on a cookie or pizza sheet covered with olive-oiled parchment paper. Use the bottom of a glass to lightly press the piles into flat circles. There should be at least 3 inches between cheese piles.
Bake 5 to 6 minutes or until they are a light golden brown with dark edges. The cooking process goes quickly, so watch them closely.
Cool the parmesan crackers on a cookie rack and store in a zipper-style bag in the refrigerator until you are ready to serve them.
