Our Parisian Sourdough Starter Culture is shipped in a barrier-sealed packet as a dehydrated culture. The starter is best if stored:

  • At room temperature (68° to 78°F): 12 months
  • In the refrigerator (40° to 45°F): 12+ months
  • In the freezer (0° to 25°F): 12+ months

    • Can we use white rice flour for the Parisian Sourdough starter? I am not familar with white flours and was wondering whether you could give me a brand of organic white flour that would work really well with this starter.

    • The Parisian Starter requires white flour made from wheat. So white rice flour would not be the appropriate food for this starter. Any brand of white flour made from wheat should work fine. Organic is best, if you can find it, to avoid as many contaminants as possible.

    • By white flour, you mean all purpose flour from the store, right? Not flour made from freshly ground (I have a mill) white whole wheat berries?
    • The white flour sourdough starters do require white flour that has the bran and germ removed, for feeding the starter. Flour made from white whole wheat berries may be used with our Desem (whole wheat) sourdough starter.

      Choose the specified flour for feeding the starter, and it's ok to use other flours as the ingredient in your recipe.

      Note that freshly ground flour is not recommended for feeding any of the sourdough starters. Please allow the flour to age on the counter for several weeks for best results.

    • If I feed the starter with white flour, can I then use it to make whole wheat sourdough? Or better off to use the whole wheat starter instead?
    • As long as you feed the sourdough starter with the flour for which it was designed (ie white flour for the Parisian Starter) you may use other flours for the ingredient in the recipe when baking bread.

I alternate between this starter and the San Francisco starter and both are excellent. The Parisian is just a bit milder. I now bake all of my loaves in a very large cast iron dutch oven that I preheat to 450 before adding the dough (carefully). Without a doubt this creates the best crust possible, and no fooling with water trays or misting in an open oven. For a 1kg dough: 30 minutes at 450 with the lid on and 5 minutes with no lid to brown. Best bread I've ever made.

Baking weekly, keep 1/3 cup starter in fridge. Night before baking feed it and then again in the morning and before noon it is so bubbly I do my bread as follows: 1 cup or more bubbly starter, 2 cups whole wheat, 2 cups white stone ground flour, 1 cup warm filtered water, 2 tbls. honey, 1/4 cup olive oil. Mix well wait 15 minutes then add 1-2 tbls. salt. Let rise for 5 hours. Knead for 3 minutes, make your loaf or loaves, place on buttered pan sprinkled with some corn meal. Let rise 2 hours or more till double. Bake 30 min. at 375 preheated oven. I make my hamburger and hot dog buns with this bread, too. Everybody in my family from tots to elderly love it.

My SD started named Jubilee is just over 1 month old. This is my first time using a sourdough starter and I am quite pleased with the results. I never ever thought I would be able to make french bread that taste so good. Seems like she gets better and better with time. I stopped giving it a second kneading and I make it in the bread maker. Once done I shape it and let it rise. At times, I add a few tablespoons of MK to the dougn. I bake bread 1 time a week and use the excess for waffle batter. May think to venture off and try another starter.

I LOVE my French sourdough starter! I've named it Jean-Luc and shared it with a friend, who named her portion Henry Pierre. I'm brand new to sourdough baking and have already successfully baked a delicious loaf of ciabatta with the discard and an even more spectacular loaf of no-knead bread in a dutch oven. Wow! I have purchased starters from other companies with disappointing results, but this starter is fantastic. It is very active and has been easy to maintain. in the first week I made pizza dough and pancakes with the discard. This week I made baguettes and they were wonderful! I don't bake during the week so I keep in the fridge and start my feeding process on Friday for the weekend.

Received the starter quickly. Followed the directions without problems with a strong, healthy start. A previous starter from another company failed. This one was strong from the beginning. After some weeks using the technique of storing in the refrigerator, I split it to make a rye starter and it performed great. Now have two starters to work with.

I have made a couple of loaves already. It's a lot of fun working with the sourdough starter, and this product (along with the recipes) made the process pretty easy!
I'm actually looking for a really hearty wheat recipe possibly with extra grains added... I think that would make a great bread.

This starter simply did not work.
I ended up doing a sourdough starter from scratch (with rye flour) and that worked easily and beautifully. So at least I know, it's not a temperature issue in my home.
That's 2 out of 3 starters I got from you that did not work. Very disappointing.
I don't even dare to try the cheese starter I got from you.

Response from CFH: The Parisian Sourdough Starter requires white flour for feedings. Once established, a portion of the starter may be switched to feeding with other flours.

I actually thought I had killed it, but the online help was awesome. My starter wasn't activating and had started to grown mold on the side. I followed the advice and now have tons of very healthy starter. Being new to sourdough I was also thrilled with the included recipes and very through instructions. Thank you very much!

A very nice culture to start a lavain. This makes for a very neutral and mild starter that can be used for most breads. I keep my starter at 125% hydration as I bake bread every other day. It requires 3 feelings per day if you do this. The flavor is slightly nut to earthy. If you bake less often reduce hydration to equal parts by weight and refrigerate up to a week without feeding. Bring a portion up yo 125 to 150 hydration day before to get a very active starter. If you buy the San Francisco starter , keep it in the fridge at 125 % hydration, it likes cooler temperature to survive and multiply.
I would definitely recommend the culture they sell as authentic in flavor development for French baguettes.

The starter revived with no problems. I made cinnamon rolls as a "test" just before a week was up and they rose beautifully. I made sourdough biscuits and pancakes with discarded starter throughout the first week and they were wonderful. I am really pleased with this purchase. Reasonable price too.

I got this as a gift about 8 months ago. I left the unopened package of starter in my fridge until a few days ago, when I started the process of bringing it back to life. After about 4 days of following the instructions pretty carefully, I have a big foamy jar of starter. After feeding, it triples in volume in about 4 hours. This is exciting!

I just baked my first loaf. I used the no-knead method and baked in a covered, preheated dutch oven. The bread came out perfectly. It's just as light and airy as my yeasted bread. The crust and flavor are superb. The sour flavor is present, but not as pronounced as other sourdough breads I've had.
