Non-dairy Probiotic Cheese


If you are avoiding dairy but still want a cheese-like food to snack on or use in your menus, this recipe makes a tasty, spreadable “cheese” or a grated garnish.

With the addition of the kombucha, it's also probiotic. You can adjust the quantities of lemon juice and kombucha as you like as long as you maintain the same volume of liquid. This recipe does not use any additives or thickeners.


  • 2 cups macadamia nuts
  • 1/4 cup pine nuts
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 2 teaspoons kombucha
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon grated onion (optional)


  1. Blend all ingredients together using the pulse setting on a food processor, then blend continuously for about 4 minutes.
  2. Transfer to a covered container and refrigerate at least 15 minutes, then use like cream cheese.
  3. You can also roll it into a log and freeze in waxed paper, then grate and use immediately.
