No Ice Cream Maker Required Kefir Soft-serve Ice Cream


This is the kind of ice cream you make when you do not own an ice cream maker. This is the kind of ice cream you make when you want something creamy and cold and sweet fast. This is the kind of ice cream you can make for breakfast and feel good about it.

This is soft-serve ice cream, made just thicker than a smoothie you’d drink through a straw, but with all of the goodness of kefir and fruit, and very little added sweeteners.



  • 1 cup raw walnuts, soaked overnight in a pinch of salt
  • 3 cups frozen fruit
  • 2 raw egg yolks, optional
  • 1-1/2 to 2 cups whole milk kefir (can use kefir made with cow milk, goat milk, or coconut milk)
  • 2 tablespoons raw honey


  1. The night before you wish to make this breakfast ice cream, soak walnuts in a pinch of salt.
  2. In the morning add kefir to food processor along with honey and egg yolks, if using. Pulse a couple of times to blend. Add walnuts and pulse until roughly chopped. Add frozen fruit and blend until completely smooth.
  3. Serve immediately as a soft serve “ice cream” or place in freezer for 30 minutes to allow it to firm up.


Note: Please exercise caution when consuming raw eggs or products made with raw eggs.
