Fermented Vegetable Master: Half-Gallon

I am currently making my second batch of kimchi. I have been interested in fermenting for awhile, but the crocks with weights are too expensive and I also didn't like the idea of the mold on top and all that. The air lock system takes care of that problem and the price for this system is right. I left my first batch on the counter for 5 days and it was fun to watch the liquid level go up and down. The resulting product was absolutely delicious and we've been eating kimchi fried rice several times a week! I can't wait until I have fresh veggies to use this summer.
