Additional Details About Milk Kefir Grains (MKG)

Milk kefir grains are live active cultures consisting of yeast and bacteria existing in a symbiotic relationship. Milk kefir grains need to be rehydrated using pasteurized dairy milk (not raw milk) before regular use. Once milk kefir grains are rehydrated, they can be transitioned to raw milk. Milk kefir grains can be used to culture coconut, soy, or rice milk once rehydrated, but must be rehydrated in dairy milk first. Milk kefir grains require regular refreshing in fresh dairy milk (as soon as the texture changes.)

Why I Love This Product

Making milk kefir is easy, simple, and fruitful... when you have good kefir grains. I have been making milk kefir for our family for years and have sourced kefir grains both from Cultures for Health and from friends who had gotten them from a friend who had gotten them from a friend. The Cultures for Health milk kefir grains have worked wonderfully every time... as long as I took proper care of them. At one point I was unable to get my grains to multiply or grow in size, but soon discovered that our kitchen was much too cold for them to thrive.     I am in love with this product. I only heard about Kefir milk 3 months ago and immediately looked for a place to buy grains after trying out store bought brands I decided to try to make my own. I ordered the grains which came with very detailed instructions and in a few days I had kefir milk. I make fruit smoothies every morning for my family and have a plain glass before bed every night. It's actually very delicious! I am very happy with the product. I am also bought the water kefir which I am waking now. Next I plan to by yogurt cultures. I'm so excited to be able to make fresh health milk and food for my family with relative ease.

    I bought the kefir kit to be able to make kefir on my own - and now drink delicious, smooth kefir almost everyday :)! I have even experimented a bit and have made some 'cheese' with curds when I let it seperate. And you can also use the kefir in all sorts of recipes - smoothies, pancakes, etc! I at first had a little trouble getting the grains to work, but the wonderful customer service practically walked me through the troubleshooting! Excellent product and excellent customer support :)!

    This is a great value--especially because all of a sudden it's almost impossible to get plastic strainers anywhere; it's all cheapo aluminum, or the price is astronomical for stainless steel.
    The grains were MUCH smaller than I expected, so I was a bit nervous as I mixed them (my 4-year old had fun with helping'baby kefirs'to wake up, by the way)in organic whole milk, covered them with a coffee filter and set them up by my little Zojirushi water heater in the kitchen so they get a nice and cozy spot to wake up in. In 24 hours, the first milk soured nicely and had a good, wild taste, but was totally runny. I wasn't too worried by then, figured the grains were working, so strained the babies and added to the second batch of milk, and waited another 24 hours.
    By yesterday afternoon I actually had kefir... The smell was very clean and just as I remembered it from my childhood in Hungary where you could get this wonderful thing in little pots at the grocery store. I started to increase the amount of the milk a bit and am looking forward to when I'll have a whole quart every day to drink and make smoothies with. My daughter loves kefir drinks I found at our local health store, but it tends to get VERY pricey. This will save us money plus it's fun to do--we are caring for something truly alive.

    The only Kefir I could get was 30 miles away and it wasn't organic and now that I make my own I realize the store bought wasn't as tasty as the Kefir I now wake up to every morning.

    I love my Kefir!!! I've dehydrated mine twice already and they come back to life within 36 hours. And they've grown enough that I've been able to share with friends. Definitely worth the $$$ and the time. I love it, my husband loves it and so do my teenagers. Everyday I can make a different flavor: Strawberry, mixed berry, pineapple, mango, even Vanilla Chai using a teabag to steep in the Kefir overnight.

    I received the milk keifer grains within 2 days from ordering, started to make keifir and realized I didn't have many grains left--I either drank them or threw them out by mistake. I called the company to ask questions and they sent a new envelope with more grains (no charge) and they even included a sourdough starter.     I had been purchasing kefir for some time and lamenting the amount of added sugar used (and the mounting cost!), and decided to start making my own. While the initial investment seemed a bit steep, I determined that once I had cultured about 2 gallons of milk it would easily be paying for itself.

    My milk kefir starter kit arrived quickly, and after reading the very thorough instructions included with the kit I set up my culture. Within 24 hours it had a fresh, yeast-y smell. Within 48 hours, it had a clean, lemony smell. Within 3 days, it was effervescent, and now after 2.5 weeks I'm getting about 3 cups of kefir each day. We keep our house fairly cool in the winter (65-67 degrees), so I think the start-up period is taking a little longer for us.

    In addition to making smoothies for the family (our favorite = 2-3 cups kefir, 1 cup frozen blueberries, 1 banana, 1 cup frozen pineapple, and 2-3 large handfuls of baby spinach), I've been drinking some plain with a hint of cinnamon or ginger and using it as a buttermilk substitute in breads and pancakes. It's a great product, and I think it's already making a difference in our digestive health.

    Finally, I have used the live chat customer service function twice now and it has been a fantastic resource for quick questions.

    I'm in Hong Kong where such things are hard to find. Lowfat kefir (is it really kefir?) is available but loaded with sugar and flavorings.

    I ordered the starter kit to my parents house in the US and they forwarded it to me, and the grains survived the trip across the Pacific no problem. The grains took a couple sessions of fresh milk to wake up, but by the third round, the outcome was as expected. It's been a fun science experiment to see how much milk takes how long to ferment, and how to adjust the process to come out with the right product. That's what's made it fun - knowing it's a living food.

    And all the advice on CfH has been helpful. I'm currently on holiday and have put my cultures in storage in the fridge while I'm away as per this website's instructions. I expect they'll come out of hibernation nicely when I return.

    I am a new kefir convert. The product, instructions, and my experience in rehydrating the grains went without a hitch. I drink it daily and have made the "cheese" for a tasty spread. I am experimenting with letting it rest for an additional day or two to increase the vitamins and probiotics. I feel so much better and have no food cravings.     I was excited about making kefir for myself, I have always enjoyed the store product, and looked forward to the personal benefits. I purchased organic skim milk, found it very difficult to locate a plastic strainer of any substantial size, so I recommend purchasing it when purchasing the grains.
    I worked with the kefir grains for a few months, but never achieved the cauliflower sized grains that one could fish out with their hands, as shown in the video. Mine always looked like cottage cheese in the strainer. The milk also never got thick, like the store brands. If I left it to thicken further, the kefir would separate into curds & whey. I found it difficult pacing its growth. It's winter right now, and for the most part the house is at 68-70*, but some days were very warm, or much colder. The kefir would sometimes set quickly and I wouldn't be home, so then I would try holding the grains over in the frig and then leaving it out for overnight, which proved not to be enough time, which meant the grains came to fruition while I was at work, again. I tried increasing the amount of milk I was using, thinking my grains were many, even if small sized. I tried cutting back the amount of milk, thinking I could get it to set in a shorter amount of time. Eventually it came to the grains would start floating on top, and no kefir had set at all. I gave up. I purchased a second set of grains, but feel that until I figure out what I am doing incorrectly there is no point. This makes me sad.

    Response from CFH: Please contact customer support for troubleshooting advice. Minor adjustments in temperature and culturing time can improve the texture and flavor of the final product.

    I didn't know what to do with all the kefir I started getting, so I made the cheese. The cheese is unbelievably good. I spread some on toast with a topping of a little marmalade, and I'm good until lunchtime. I also add a tablespoon of the cheese to eggs for scrambled eggs -- makes them really fluffy and rich.

    My milk kefir starter kit arrived very fast----much faster than any of my amazon orders! Everything about it worked well for me---the simple yet elegant and professional packaging, the easy to navigate instruction booklet, and the clearly labeled grains themselves. Rehydrating the grains went smoothly per the instructions. I contacted customer service several times for answers to various questions that came up and received courteous, prompt, and informative replies. I didn't have any trouble with the grains doing their work as a culture. I did use a reptile heat mat because my house is so cool in the winter. The idea for the heat mat came from customer service and was a life saver for the entire project!

    I had some trouble initially activating my grains because I was using non-homogenized milk. (The grains got caught up in the cream layer as it separated. I should have been more vigilant about stirring). Anita with customer service was very helpful (and patient!) with all my questions and walked me through the process of fixing my situation.     I love this product, the only thing is I am having a hard time making the grain to multiply, I like my milk little more thick, so I strain and it is like a yogurt texture. love it.

    CFH response: Milk Kefir grains tend to grow and multiply with access to plenty of fresh milk and a moderate temperature. To ensure that the grains are getting enough food to culture the milk with enough energy left for growth and reproduction, change the milk at the "thickened-milk" or buttermilk texture stage. You can complete a second fermentation on your finished kefir to achieve a thicker texture. It is also a great time to add a little flavoring.     I decided to try kefir after realizing I could use some probiotic support. I bought a quart from the store to see what it was supposed to be like, and while the homemade isn't quite as yogurty (because the store-bought has additives like pectin), I love making it!     The order arrived promptly and is properly packaged. The sealed pack that contained the grains was within a sturdy cardboard box and the nylon filter and net bag were packed nicely within. Everything was of high quality and it was evident that Cultures for Health takes care in the way they do business. Following the directions and using grass fed organic whole milk, I had the mile jar in a warmer room of about 75 degrees. After 24 hours I filtered the grains out and discarded the first milk. After the second 24 hours I again filtered the grains and discarded the milk. The milk I poured off was noticeably thicker and I refilled the jar for the third go. The next day I called Customer Support and spoke with a very nice woman whose name I wrote down, but do not recall right now. She was patient and answered each question just right. In my case she told me that as the milk had thickened significantly, I was ready to check it out by a taste. I did this on the third batch, and voila, I had kefir. And it has been like clock work each day. I filter the milk out each evening at dinner time, refill with fresh milk and by dinner the next evening I have another 12 oz of kefir. The nylon filter is of very good quality and works just right for filtering the milk and collecting the grains. I use chop sticks for stirring the thickened milk to loosen it before pouring it through the filter. For removing the grains from the filter I either use a plastic spoon from a to-go set, or lightly tap the filter upside down and let the grains fall back into the jar. I am very glad that I chose Cultures for Health to provide kefir grains.

    To tell you the truth, we had never heard about kefir until my wife's Doctor told us to buy Kefir at a local grocery store. In just a few days she started getting relief. She is still on the IV and continues to use Kefir. The Dr. told us to do a little of our own research. I found Cultures for Health on youtube. After a few days, I ordered my own kefir grains thinking I would be able to save money by making it myself. The results have been great!     After a round of antibiotics, I became gluten-intolerant at 72 yrs of age. My diet is now gluten-free and I have consumed many probiotic products in an effort to get back in balance, but I still did not feel 100% Nothing worked until I made my own kefir.     Well worth the money. I was having trouble finding whole milk kefir in my local grocery stores, but I do have access to semi-local whole milk that is pasteurized at the lowest temp possible. Now that I have the kefir grains and plastic strainer, I can make whole milk kefir every day! It is wonderful.

    My start was a little rough, tried two non-organic milks over two+ weeks (the first one would only half ferment and the second would *not* ferment for me at all) before trying organic milk and PRESTO! Grains are fermenting like little pros :) Now I have more kefir than I know what to do with and am venturing into trying cheeses and dressings made with a kefir base. Wonderful product, highly recommend this starter kit!

    I have had kefir before but lost it while gone from my home, since I didn't know how to store it. I started to look for it on line and came across "cultures for health.com" BEST THING I EVER DID. my grains have been growing so fast and are so healthy, I have to give some away already. I am trying to get everyone who will listen about kefir. I would recommend to every one out there to buy their milk kefir from cultures from this company. their customer service is great, always willing to help and always there, on phone or chat. it is wonderful stuff and so healthy from this company, I don't know if others had the exceedingly prolific growth I experienced but I wouldn't use any other place or company to buy cultured foods.     I love this Kefir culture starter kit. The kefir is very tasty and smooth. I like to strain it after 1 day into another container and do a second 1 day fermentation with a few frozen organic strawberries. My 3 year old son calls it "strawberry milk" and loves it! The little strainer it comes with is helpful to have - I am not sure if I could have found a similar one made out of plastic elsewhere.

I am so much more aware of the milk now (ultra high pasteurized v. pasteurized). I accidentally used ultra high pasteurized, however, and my kefir turned out just fine. I was worried I was going to kill it. Pretty tough grains. Highly recommend this to anyone spending upwards of $5 kefir at the store.

    My first week of kefir making did not go well. I had bought a store brand organic milk, since the first week the kefir pretty much wakes up and starts producing, and I did not want to waste expensive milk for this process. After the second day in the store brand milk, my kefir started making an extremely foamy, yeasty brew, that tasted like alcohol. I tried fixing this overgrowth of yeast any way I could think of without success. I was about to throw away the kefir grains. I had run out of the cheaper organic milk, and just to keep the kefir until the next day, I added my usual drinking milk, a brand name organic whole milk from pasture raised cows. The next morning I had perfect mild wonderful kefir ! The store brand milk obviously caused this yeast overgrowth, so if you run into this problem, change milk brand.
    I have a glass of this kefir every morning now. It tastes wonderful. Mild, and so thick, I could use it like a yogurt.

    Note from CFH The yogurt texture can be a little stressful for small grains. We normally recommend culturing to a "thickened-milk" texture, more like buttermilk to ensure that the new grains are getting plenty of fresh food (milk).     I was amazed at how fast I received my kefir starter kit after I ordered it. Once it arrived, I got started with the re-hydration and reactivation process. My next shock was that on the second day of the process I found that I had a thick, creamy, and very mild kefir waiting for me. I have been enjoying the stuff ever since. I can't recommend this product enough. It is so much better than any store bought that I have ever tried.

    a great product with exceptional support staff. this culture is pretty forgiving so just use some common sense and go for it. if you feel like you're becoming a slave to it just throw it in the fridge for a bit then pick up where you left off later. also, i've had great results w/ ultra pasteurized milk as this is the only kind i can find in my area. cheers and thanks to CfH for a great product and support.

    This kit is a great place to start. I have been buying kefir for my kids for 2 years because my son wouldn't drink milk. I have now been making my own kefir and flavoring it with blueberry juice and a little maple syrup. I love how easy it is and my kids love it. I barely get any, because they ask for as I am straining out the grains. The grains are doing very well after 4 or 5 days of re-hydrating. We now do 3 cups of milk every 24 hours.

    It took me quite some time to rehydrate the kefir grains. I definitely would recommend using a type of heat source if you are doing this during the cold winter months.     Before purchasing the Milk Starter Kit I watched the "How to" videos and read the "How to" information links provided on the Cultures for Health website.     I have been using the milk kefir grains for about a month now. I use 1% organic milk and the kefir tastes great. My husband makes kefir smoothies every morning, I use it to replace buttermilk in recipes(bread, pancakes). I have also been hanging it to separate the whey (breadmaking) and use the thickened kefir like sour cream. We use about 3 quarts a week of kefir a week. I have already shared grains with a friend.     I picked Cultures for Health over less expensive options because I figured I would be paying for quality backed up by customer service and reputation. I liked the quality of the information given and the patience of the staff in chat.

    I was not disappointed. I was worried that my culture might not thrive, but quickly it activated to the point that I needed to back up my grains, as I couldn't afford to buy that much milk every day. Within a month and a half a good 3/4 of my purchased grains needed to be dried for backup, and just one small and very active grain thickens six cups of kefir very well every 24 hours. Awesome.

    When I first discovered Kefir in the grocery store I thought it was expensive but I knew I needed probiotics.     I got my first kefir grains in the mail and started the re-hydration process. After 7 days of not working I thought that the room I was keeping it in was too cold so I moved it to a smaller room where I could increase the heat. Unfortunately it died a horrible death at the hands of a nasty invasive bacteria or yeast. I contacted customer support and they walked me through some possible problems and I discovered that the kefir was too near a couple of potted plants on the shelf with it in the new space and that is where the invaders must have come from. Within 2 days of getting new grains and following their suggestions I had delicious kefir! Now several weeks later I am still getting a new batch about every 12 hours, making kefir cheeses and smoothies too! Great product and a pleasure to work with the people at C for H!

    i am so glad i got this kit - so nice to have a dedicated strainer only for the kefir - i never have to go looking for it...
    At first i was really wondering if this was going to work, but it really did take about a week for the kefir packet to rehydrate and start growing and actually making the kefir.
    Now it is like having an enthusiastic pet ~ every day a new jar of kefir and at first i thought whoah, when am i going to eat all this? then realized oh ya, let it rest in milk (changed often) in the fridge til i catch up with stuffing my face...

    At first, I had a hard time finding the tiny grains in the porridge like consistency of the curds. Living in Arizona my house is warm so I had to increase the amount of cold milk and watch it closely to avoid the milk separating into curds and whey. After 7 days, I think I've got it. My kefir is now perfect. I love it best ice cold in a chilled drinking glass. So glad I was patient and persistence in activating the grains.

    I started buying store bought kefir a few months ago, loved the taste and then found out why, all that sugar! Started reading about the health benefits of home brewed and then bought my kit. It took a bit longer to get my grains rehydrated and working right, but kept on feeding them fresh milk each day and am now making a fresh batch every 24 hours. The second ferment was key for the texture and flavor I was looking for. I keep a jar in the fridge with a cinnamon stick inside and it is yummy! I love that it has a longer list of probiotics than the store bought brands, and no added sugar. I mix a little organic juice in the cup and drink it each night before going to bed. I visualize all of those incredible happy little life-givers coating my insides all the way down. Couldn't be more pleased to have the ability to make such an alive and healthy product in my own kitchen.

    I had been buying kiefer at the store, but I wanted a greater diversity of pro-biotics than what the store bought stuff could offer. I found this kit and thought I would give it a try.     Only one suggestion. We travel and it's really difficult to take the kefir with us. What can we do to preserve it (not kill it) if we are going to be gone a few days. Can I put it in the refrigerator to slow it down or do I just get a "babysitter"?

    The grains shipped quickly and I had no trouble getting it to start up. I've only been making milk kefir for 12 days now and it's going very well. Sometimes too well. My kefir was getting made too quickly for the amount that I wanted to drink. And it tended to be too thick since the organic dairy I was using has all Jersey cows who make very creamy milk. So I switched to 2% milk of theirs and put the culture for a time in a 60 degree room to slow it down a little and now it's going fine for me. I easily get two pints a day and have started drinking more kefir. I like it with vanilla and stevia in it. My stomach likes it better than the yogurt I had been eating every day. The support is top-flight. Very easy to get help which I've done twice now. Wonderful company.

    Bought the milk kefir kit and glad I did because I needed another plastic strainer. I've been making water kefir and we love it! Couldn't wait to try making milk kefir. My first grains worked fine for about two weeks and then quit. Talked to Anita by email a few times. She made several suggestions but I just couldn't get the grains to thicken the milk. I think my problem was that although I was using organic milk (Horizons) it is ultra-pasteurized (which is why it has a shelf-life of two months!). I started using just plain pasteurized milk and have had no problems. I will eventually use raw milk when I can locate it around here. Love using kefir as a buttermilk replacement in baking and the cheese is great for making ranch dip and dressing! We don't drink smoothies much, but I know they are very tasty made with fresh fruit and berries. I am so glad I tried milk kefir!

    They arrived in good condition. Instructions were good. For some reason the kefir is not getting thick. It stays rather chilly in my house about 68 and it is hard to find a warm place to put the grains. My husband does not like that I am culturing kefir so I can't leave it out on the fridge or out someway. It is beginning to get better but I think it is the temperature of the house. I am happy with the cultures and they have matured to look like grains I have seen online. I recommend cultures for health to anyone who will listen. I also really appreciate the videos on your site which I watched more than once to make sure I was doing things right.

    I had never made (or tasted)kefir before I received these grains. The first activation yielded slightly nutty tasting milk but the second activation yielded kefir! Day 2 the kefir cultured so fast that it was on the verge of becoming curds and whey in about 20 hours, even though I had increased the milk some and the temperature was about 78 degrees. Day 3 the mix was curds and whey in about 14 hours! I carefully salvaged the grains and the next batch was almost perfect at about 12 hours. These grains are so active that I will have to time making kefir so that it doesn't over culture. I am very pleased with my results! Great product from CFH! And I love the kefir with a little maple syrup mixed in! The strainer is a real plus...easy to clean and nonreactive.

    It is painful to go through the process of activating the grains. Each day I hoped for Kefir, even marked the days on the jar. Then on the 7th day was success, how sweet it was. Was fun to see the grains puff a little more each day. My back up plan was to call my sister and beg for grains. I made really good sour cream. My daughter is lactose intolerant so am sharing with her. I had found cheaper grains, but a good recommendation goes a long way in my decision making.     Delivery quick and product arrived as advertised. Follow all steps to activate my kefir grains. However, by end of first week I don't know what I did wrong - everything was clumped up like curds & whey - I couldn't find my kefir grains! Fed all to chickens. Would like to start again but, hesitant because I don't know what I did wrong and don't want to spend money on something I can't use properly.

    p.s. My husband and I love kefir - we were so excited to try and make our own.

    A quality product and the instructions were simple. My grains performed well after a few days. I'm single and had to put them on "vacation" for a few days because I couldn't consume that much kefir! But, it's been a fun and wonderful experience.     The cultures woke up after 2 days and quickly started making up to a gallon of kefir per day - half gallon twice a day. Now I only make half gallon during the day, and leave the grains in the fridge during the night.

    CFH Note ~ The grains may not always activate that quickly, especially in cooler environments. It looks like you've discovered the perfect ratio of grains to milk and a wonderful culturing temperature.

    Grains arrived quickly and were packaged well. I was making kefir within a few days. Although they haven't multiplied, my grains are strong, and I am producing 1 quart of kefir every day. Once strained, I leave the kefir on the counter for a second 24-hour ferment and then refrigerate. I add maple syrup, shake vigorously and have the best tasting kefir money can buy...certainly beats anything I've ever purchased from the store. The grains can probably handle more milk, but I will wait for them to grow before moving forward. Great stuff!

    After receiving help via the chat room and e-mails, I was able to successfully make milk kefir first with pasteurized whole milk and then transitioning to whole raw milk. After some experimentation, I found that fermenting for around 12-14 hours and then straining out the grains, then fermenting a second time to around a total of 24 hours (first and second ferments together), my kefir would become thicker and much more to my husband's and my liking.

    I have had to put my milk kefir grains in some milk in the refrigerator for a few days because my husband has to avoid milk for a medical procedure. It will be interesting to see how well the milk grains become active again.

    I recently purchased a vegetable culture and a milk kefir starter kit. I was very pleased with both. After approx 10 days of enjoy kefir something went wrong. Kefir stopped producing. Customer service was quick to help and soon fixed my problem and got me back up and producing kefir. Excellent customer service!!!!

    I liked this product and was able to get the grains started. My only problem is with the price charged in comparison to the amount of grains received. In the past, I had received kefir grains started by a friend, and I was processing a half gal of milk a day. With this much smaller amount of grains, a month later I'm still getting only 1-2 cups max per day. I'm waiting for the grains to grow into the much larger, jellyfish-type clumps that I had before. So, although the quality of the kefir in this product seems good, I'm disappointed about the amount per packet.

    Only just started making Kefir. Didn't even know it was sold in shops! However on reading the reviews here I understand that I am doing the right thing in making my own as it is far better for me. Have been adding frozen fruit and honey to make a delicious smoothie for breakfast!Have a great book with loads of recies in that I can't wait to try as well.

    This set does make really good kefir. However, I am a little disappointed with the extremely small size of the kefir grains. They do work though - it's just tedious to make sure you don't lose grains in the straining process. I've only and them about 3 weeks and am hoping they get bigger as time passes. The strainer is very small, I have a larger one ready to buy now. The cotton bag is still in the original wrapper unused - maybe I will use it for something sometime. All in all I'm glad I bought these because they do work but mostly glad I got them from this company for the wonderful help they provide via chat.

    This is my first Kefir purchase and I am impressed with the product, the information and video instructions available on line. All has gone well, they rehydrated well and I've been enjoying the finished Kefir. My only complaint was the shipping cost. There has to be a better way, it was close to twice the price of the product!

    I have a yellow Lab (Daisey) who has allergies. Daisey & I each have a cup of Kefir every day. Mine is in a fruit & veg. smoothie, hers is mixed with rice and whatever leftovers we have. Her allergies do seem to be much improved as well as my digestion. The 2% organic pasteurized milk is a bargain in that a gallon lasts us 8 days for $6. You can't get that much nutrition for quadruple that amount.

    I think I've been successful as a coworker said mine was better than what's offered in the store. I'm still a little concerned that I'm doing the right thing. I agree with the review that stated there wasn't much info in the guide as to WHAT to look for. I am very thrilled to be making something healthy so I appreciate the company.     I think that by the fourth day, I was making kefir using grocery store brand whole milk. Now, it ferments so fast I can't keep up with it. I may try drying half of my grains in order to slow down the fermentation process.

    I cannot recommend this kit. The booklet that comes with it is convenient to have, but contains recipes and information that is easily found on this web site. Also included is the general instructions sheet (you don't need the booklet).
    The biggest issue I have is the 3.5" strainer that came with the kit. (and this was the reason I bought the kit - to get a strainer) It is too big for the wide mouth mason jars, and the mesh is too fine to strain the kefir (you must put very small amounts of kefir into it and force it through the fine mesh - time consuming and messy). Save some money and buy the grains alone,

    CFH Note: The 3.5" mesh strainer is perfect for trapping even the smallest baby grain. A silicone or rubber spatula can be used to gently stir the kefir in the strainer to speed up the straining process A canning funnel can be used with the strainer for easy straining into wide mouth or regular mouth canning jars, the strainer sits on top of the funnel.

    it took me about 5 days to activate the grains, now that they are active, i am drinking it almost every day.

    What I have seen is that you better start small, meaning that it's not good to start fermenting 4 cups right after the activation, I've been doing 1.5 cups every time, and it's been the best way for me.

    The 4 cup thing hasn't worked that well for me, I guess you need the grains to be more plentiful, and then to try the 4 cup at once.

    These little guys ramp up FAST! I don't live in a hot climate either... San Francisco Bay Area. Anyway, love them!

    I was clueless like many others... had to do a lot of online reading and looking at pictures. But, it came together fairly easily and quickly with some faith in the process. Also, CFH chat support is EXCELLENT.

    My daughter who loves milk, loves kefir EVEN MORE! so it's a hit in our home. Actually, everyone **loves** it.

    Mine have also not multiplied at 3-4 weeks later, I guess it doesn't matter so long as they keep turning milk to kefir.

    The only thing is ... I think they're expensive at $18 for 1 teaspoon of grains. Granted, they're high quality. I guess the fact that they come with excellent online chat support is worth the extra $$, but even with that, they're still pricey.

    After three weeks of faithfully following directions, I have yet to see "grains" as described by others. Something is working....after straining the "kefir" I just add the last tablespoon or two of curds into the next jar and keep going. My product looks like buttermilk and tastes something like buttermilk. When will my curds grow up to be grains???

I contacted the online support for advice. They were very helpful in providing strategies for success. Unfortunately, I still do not have homemade kefir.

    Is timing everything? it has been 3 weeks or more now since activating my Keifer grains, as per the manual & online video tutorial.I have yet to yield a delicious result of Milk Keifer. I have been going through a lot of who organic milk and also having the sore bought Milk Keifer in the mean time. I find after the 24 hours the milk has an nice sour scent but is not thick Or, it has turned to curds and whey. I have not been able to successfully make Milk Keifer. I am very disappointed because I paid a total of $74.00 for my grains since I live in Canada. Hopefully I will be able to drink my own Milk Keifer soon.

    CFH note ~ Yes, timing is everything and so is a consistent culturing temperature while the grains are acclimating to the new environment. If you are having problems, it is important to contact Customer Support as soon as possible. Most issues are very easily resolved if we know before the grains become too stressed.

    The Kefir Starter Kit is easily the best money I spent in 2012. Not only did I buy it, but I had it shipped to South Korea where I reside. After a month in the mail (due to the Christmas mail slow-down) I was certain that I had wasted my money on a dead product ($40 total including the won-to-dollar conversion plus shipping). However, within a week of carefully following the directions I started getting fresh kefir - after a couple of weeks I started making a quart of kefir daily. It's delicious and the supply never ends as long as you maintain it as directed (only takes a few minutes a day).

    I mix the fresh yogurt with fresh, raw honey I get from beekeepers down the road. The taste is amazing, the product is totally fresh and it's FREE. Hmmm, let me think ... yeah, I'd have to give this a thumbs-up.

    The directions provided were very unclear (i.e.; check every 24 hours - check for what? I'm brand new at this! I can look at it often up to 24 hours - or every hour, but you don't detail what it is I'm looking for! I haven't a clue). I tried calling for help to no avail - lines were always closed when I was trying to get help. We really want this to work for us. But have NO idea how to get to this point with the undetailed and unclear directions provided. Your directions may be perfect for someone who has made their own kefir before. I've only had kefir once in my life and have never made it. Please read your instructions as if you are the novice that I am - and see how the instructions do not meet the needs of a newbie. By the way - I have kept everything - as your instructions say to do - I haven't a clue as to what to do with the stuff!

    In summary, I'm very disappointed and out a fair amount of money (with the organic milk and the raw milk - products that I don't normally use or buy and the 2 packages of grains) and a lot of time and energy. Not all of your customers are experienced in making kefir. You need to provide much, much more instruction - detailed instruction and help available when it is needed.

    I have used Kefir grains in the past, and since Cultures 4 health had very good reviews, I thought I would give them a try. After two weeks of attempting to wake up my grains, I contacted customer service(CS). I exchanged four emails with CS, and sent pics of my horrible looking grains. CS sent me a replies of advice already contained in the instructions, which I followed, yet all I wanted was a set of replacement grains. After my 3rd week of dead grains, and no movement from CS to replace them, I decided to buy from another company. Those kefir grains are thriving.

    • Will the Kefir grains last forever with proper care or are these the kind that have to be rebought and started after some time. Do these have only around 7 to 10 probiotics as compared to 40 to 60 in genuine? I guess I am asking if these are genuine kefir grains?

      Initially I asked and you responded as follows:

      Milk kefir grains can be stored in milk in the fridge for up to 3 weeks (use an airtight lid). Unless you can find someone to change the milk while you're gone, you should plan to dehydrate the grains and rehydrate them again when you return
    • Take a non-metal casserole dish and lay a piece of parchment or waxed paper on the bottom. Spread out your grains on the paper in a single layer. Put a light towel or cheesecloth over the casserole dish (not touching the grains) so the grains can dry out at room temperature without getting flies/debris on them. It may take a few days, but once they are dry, put them in a baggie or jar and store them in a cool pantry or fridge. They should keep for 6 months.

    • I would like to place an order. I am currently in Kentucky for an extended stay. My home is in Ohio. Delivery address is a UPS box. Our mail is only picked up once a week. Will the kefir grains last up to 2 weeks in a mail box?
    • Although the grains are shelf stable for several weeks, during the summer months It is not advisable to order them if you are unable to retrieve them upon delivery. Heat will damage the grains, even though they are dehydrated. Unless you are certain the UPS facility can maintain its room temperature, it's best to send them to an address where the recipient can get the package, and then refrigerate it until you return. Or, you can wait to place your order.

    • Yes, milk kefir grains and water kefir grains are two different cultures, each with its own set of bacteria and yeast. Milk grains require lactose from milk to survive, while water kefir depends on nutrients from cane sugar and water.
