Our Milk Kefir Starter Kit includes:

Milk kefir grains are live active cultures consisting of yeast and bacteria existing in a symbiotic relationship. Adding the kefir grains to fresh milk yields a probiotic drink within 24 to 48 hours. This dairy kefir culture is reusable, and with care, will allow you to make kefir over and over again.
- Traditional heirloom-style kefir culture (aka "grains" due to appearance); not a powdered starter culture
- Reusable culture; makes a new batch of kefir every 18-48 hours

Milk kefir grains are a starter culture that can be used with soy or coconut milk if care is taken to occasionally revitalize them in dairy milk. There are numerous uses for kefir including making a type of cream cheese, adding to smoothies, and drinking alone. Kefir can also be flavored after it has cultured and the kefir grains have been removed. Milk Kefir Grains Ingredients: Organic whole milk, live active cultures. Packaged with a small amount of organic powdered milk to extend shelf life.
Milk Kefir Grains are produced in a facility that also processes soy, wheat, nut, and fish products.
Shipping Information: Our Milk Kefir Grains are shipped in a dehydrated state in a barrier-sealed packet. Upon receipt, the dairy grains can be rehydrated in fresh milk (this process usually takes 5-7 days) and then used to make kefir by adding the grains to fresh milk, stirring, covering, and leaving at room temperature until the desired consistency is reached (no more than 48 hours).

- I'd like to use the Kefir Grains for raw goat's milk. When I get them, can I rehydrate them in raw goat's milk so they will work better when I make my first batch?
- You can rehydrate your grains in goat milk but you will need to pasteurize the milk until the grains are producing good kefir and have grown a little. You might want to plan on a few weeks of pasteurizing your raw milk but be sure it has completely cooled to room temp or lower before adding the grains, excessive heat will damage the grains.

Also, does this apply only to canned coconut milk? Or can we used coconut milk in cartons such as So Delicious Coconut Milk? If canned only, should it be full fat only, or will light work too?
Finally, can you culture other milks such as almond milk with kefir grains?
Sorry for all the questions. I've been making kefir successfully using dairy milk for a few weeks now and wanted to try coconut milk, but I don't want to mess anything up! - You should put the grains back into dairy milk every few batches. The grains need dairy milk for nourishment. You can also culture other milks using milk grains, but the natural food for grains is dairy milk. It would be best to wait until you have extra grains to experiment with.

- I just bought the milk kefir grain but I am going abroad for one month. Is there a way to keep them alive while I am away for one month?
- The best way to keep them alive would be to put them in the refrigerator in milk and ask a neighbor to change the milk once a week. If that isn't possible, you will need to dehydrate your grains and rehydrate them again when you get back. Thanks Steve - There is a small quantity of grains in the package that generally rehydrate to about 1 tsp. This quantity is enough to culture up to 1 quart of milk. The grains, when used with care, will often continue to grow and should be divided when doubling in quantity to culture a second quart or share with friends.

- What kind of coconut milk should I use for making coconut kefir? Should I use Thai coconut milk in a can or should I use the coconut milk in the milk carton.
- To make coconut milk kefir, use fresh homemade, canned or boxed coconut milk. We do recommend avoiding brands with additives and sweeteners as they can be hard on the kefir grains. Guar gum which is a typical additive does not seem to be problematic.

This is a great value--especially because all of a sudden it's almost impossible to get plastic strainers anywhere; it's all cheapo aluminum, or the price is astronomical for stainless steel.Value Quality Price
The grains were MUCH smaller than I expected, so I was a bit nervous as I mixed them (my 4-year old had fun with helping'baby kefirs'to wake up, by the way)in organic whole milk, covered them with a coffee filter and set them up by my little Zojirushi water heater in the kitchen so they get a nice and cozy spot to wake up in. In 24 hours, the first milk soured nicely and had a good, wild taste, but was totally runny. I wasn't too worried by then, figured the grains were working, so strained the babies and added to the second batch of milk, and waited another 24 hours.
By yesterday afternoon I actually had kefir... The smell was very clean and just as I remembered it from my childhood in Hungary where you could get this wonderful thing in little pots at the grocery store. I started to increase the amount of the milk a bit and am looking forward to when I'll have a whole quart every day to drink and make smoothies with. My daughter loves kefir drinks I found at our local health store, but it tends to get VERY pricey. This will save us money plus it's fun to do--we are caring for something truly alive.

I bought the kefir kit to be able to make kefir on my own - and now drink delicious, smooth kefir almost everyday :)! I have even experimented a bit and have made some 'cheese' with curds when I let it seperate. And you can also use the kefir in all sorts of recipes - smoothies, pancakes, etc! I at first had a little trouble getting the grains to work, but the wonderful customer service practically walked me through the troubleshooting! Excellent product and excellent customer support :)! The Kefir Starter Kit is easily the best money I spent in 2012. Not only did I buy it, but I had it shipped to South Korea where I reside. After a month in the mail (due to the Christmas mail slow-down) I was certain that I had wasted my money on a dead product ($40 total including the won-to-dollar conversion plus shipping). However, within a week of carefully following the directions I started getting fresh kefir - after a couple of weeks I started making a quart of kefir daily. It's delicious and the supply never ends as long as you maintain it as directed (only takes a few minutes a day).Price Value Quality
I mix the fresh yogurt with fresh, raw honey I get from beekeepers down the road. The taste is amazing, the product is totally fresh and it's FREE. Hmmm, let me think ... yeah, I'd have to give this a thumbs-up.

I am in love with this product. I only heard about Kefir milk 3 months ago and immediately looked for a place to buy grains after trying out store bought brands I decided to try to make my own. I ordered the grains which came with very detailed instructions and in a few days I had kefir milk. I make fruit smoothies every morning for my family and have a plain glass before bed every night. It's actually very delicious! I am very happy with the product. I am also bought the water kefir which I am waking now. Next I plan to by yogurt cultures.
