This kit includes:

  • Incubator:
    • An insulated case for the Cheese Vat to sit in during the process to keep the milk the proper temperature.
  • Cheese Vat
    • Can be used to heat up milk in the microwave (easy clean up) or a safe place to store finished cheese.
  • Cheese Mold and 950ml brining container
  • Maturing Box with drying rack
    • A great place to mature cheeses that need to be kept in a humid and sterile place.
  • 3ml Pipette
    • A handy measurement device. Can be used to measure or transfer small amounts of rennet, lipase, or calcium chloride.
  • 10ml Measuring Beaker
    • Used to dilute rennet or lipase in the right quantities to ensure even distribution in the milk.
  • Long-stem glass thermometer
    • Useful for measuring milk temperature in deeper pots
  • "Making Cheese" pamphlet

Starter cultures, rennet, and other ingredients must be purchased separately.

    • How, exactly, does this work for aging cheese? How is the temperature maintained?
    • This kit includes an insulated culturing box. It works very well for cheese that needs to mature for a short time. For longer aging of cheese, we recommend using the ideas outlined here:

    • What is the incubator? Looks like a ice chest..
    • The incubator is a heavily insulated container designed to keep the milk at a steady temperature while it cultures with a starter culture. It is similar in concept to an ice chest. it is sized to hold the included Cheese Vat.
