Recipe: Minted Sprouted Pea Dip

Mint and peas go hand-in-hand and this dip showcases their harmony. Packed with green goodness from pea sprouts, greens, and fresh herbs, this flavorful dip will satisfy any veggie-lover.


  • 1 cup sprouted green peas
  • 2 cups baby arugula
  • ¼ cup packed mint leaves
  • 2 Tbsp. minced fresh chives
  • 2 Tbsp. lemon juice
  • 3-4 Tbsp. olive oil
  • Salt and pepper to taste


  1. Combine all ingredients in a food processor, adding just enough olive oil to create a smooth texture. Season with salt and pepper to taste.
  2. Serve atop sourdough toast or alongside raw vegetables.
