This culture has a mild yogurt flavor with a heavy body and is for use with a yogurt maker or similar heating appliance. This is a direct-set yogurt starter and cannot generally be recultured (see below). Kosher.

Each Resealable Bottle Contains: 1-1/4 teaspoon direct-set freeze-dried yogurt starter; sufficient to inoculate milk at the following rate: 1/8 tsp. per 1 to 2 quarts milk; 1/4 tsp. per 1 to 4 gallons milk. Store in the freezer.

Instructions: Heat milk to 180°F. Cool milk to 115°F. Add the yogurt culture and stir gently until fully dissolved and well distributed throughout the milk. Incubate the mixture at 105° to 110°F for 6 to 7 hours until set. Refrigerate prior to eating. For added body, add 1/2 cup nonfat powdered milk before heating the milk. Ingredients: Milk, live active cultures (Bifidobacterium lactis, Lactobacillus acidophilus, Lactobacillus delbrueckii subsp. bulgaricus, Lactobacillus delbrueckii subsp. lactis, Streptococcus thermophilus)

What is a Direct-Set culture? A Direct-Set culture is a one-time-use culture and cannot be recultured (i.e., perpetuated beyond the single batch). Direct-Set cultures are often preferred by occasional yogurt makers as they require no maintenance or care. Simply keep the packet in the freezer and remove the portion for your recipe when it's time to make yogurt. Most Direct-Set cultures contain multiple doses to inoculate multiple batches.

    • This product, as well as our other kosher yogurt starters, is certified Circle K Dairy Kosher.

    • Is this kosher certified Circle-K Dairy or just plain circle-K? My son has a serious reaction to even small amounts of cow's milk dairy and I'm looking to use a yogurt starter with goat's milk...
    • This starter is cultured in milk, and includes milk as one of its ingredients. Once it is used to produce yogurt with goat's milk, the amount of cow's milk in the yogurt would be miniscule. (1/8 teaspoon of starter inoculates up to two quarts of milk, so the ratio there would be 1 part of cow milk to 392 parts of goat milk. This would be equivalent to 1/128 teaspoon of cow milk in a half-cup of goat milk yogurt.) You might check with your health practitioner to see if this would be an appropriate choice for your son.

PERFECT - Easy - Tasty Review by Tammy
I purchased this product because it is kosher. I used 1/8 teaspoon to 4 cups Organic Whole Milk and my Dovier yogurt maker. I set the time for 9 hours.

The taste is lovely. Not as strong as I thought it would be when I opened the lid. 1 teaspoon of honey is more than enough to sweeten perfectly!

It came out a bit more 'liquidy' than the store bought I'm used to, but I will try 10 hours next time, and maybe draining for a couple hours. This is just a personal preference - not a reference to the product.
