It took a few weeks for my grains to really produce useable water kefir. They have multiplied considerably and produce a batch ready for a second fermentation in less than 48 hours. I found a recipe that adds a whole lemon and a couple of figs to the first ferment. When the figs float to the top, its ready for a second ferment. We purchased grolsch style bottles for that and have had great results with lots of carbonation in 24-48 hours. I've added fruit juice, fruit puree, ginger etc. with good results. I'd love to hear what others are doing!!!
