Milk kefir grains are live active cultures consisting of yeast and bacteria existing in a symbiotic relationship. Adding the kefir grains to fresh milk yields a delicous probiotic drink in about 24 hours. Milk kefir can be enjoyed plain, flavored, or used in many recipes, like salad dressing, bread, and ice cream.

  • Contains 1 packet of traditional heirloom-style milk kefir grains.
  • Rehydration period of 3-7 days required before regular use.
  • Reusable culture; makes up to 1 quart of kefir with every batch
  • Instructions for using milk kefir grains are included.
  • Cultures on the counter at 68°-85°F
  • Suitable for use with cow or goat milk.
  • May be used to culture coconut, soy, or rice milk once rehydrated in dairy milk; grains require regular refreshing in dairy milk.
  • Nut and seed milks yield inconsistent results.

Why I Love This Product:

Milk kefir is my favorite fermented food! It is so easy to make. Every 2 days or so I spend 5 minutes straining and pouring the milk on top of my grains. My kids love it (especially mixed with a little honey). Because the milk kefir grains are reusable, they are an easy inexpensive way to make kefir forever!     • I'm going to be away for the weekend, is it safe to leave my kefir over the counter or should I refrigerate? Thanks.
    • Anytime you are not able to give your milk kefir grains fresh milk every 24 hours, you must preserve them in some manner. For short term, you can simply put them in fresh milk in a jar/lid and store them in the fridge. They are safe for up to 3 weeks. If someone is able to give them fresh milk at the end of that 3 week period, you can store them another 3 weeks. After that, they must be put back to work or they will suffer damage and will likely die.

      We do not recommend storing them often in the fridge, as this can break down the grains' bacteria and enzymes and cause them to cease working.

    • My kefir is curdling after I strain it and put it in the fridge. What am I doing wrong?
    • It sounds like your kefir is continuing to culture in the fridge. You may want to check the temperature in your fridge and if you are storing your kefir in the door, move it closer to the back of the fridge where it will remain more cold. If your kefir is separating during the culturing process, you will need to increase the amount of milk you are using or decrease the culturing time to reach that wonderful "thickened-milk" (like buttermilk) stage before storage.

    • I live on the southeastern Arizona desert and we do not have central heating/cooling. I don't have a thermometer in my kitchen, but I'm sure it gets over 85 in the summer and sometimes below 65 (we heat with wood) in the winter. Are the milk cultures so temperature dependent that I would not be able to make my own kefir. I tried the water kefir last fall, but I guess it got too cold and my grains died. I love the kefir cheese and really want to make own if it is at all possible.
    • Yes, the milk kefir grains must be cultured between 68º-85ºF. If it gets too cold or too warm, they will not be viable. Perhaps looking at the following articles might be helpful in maintaining your temperature during the cold and hot periods of the year:

      Is the protein in milk broken down or digested when being made into Kefir? The casein in milk is really hard to digest and is why many health professionals recommend giving up dairy. Thanks!
    • During the culturing process lactose is consumed by the grains. Casein still remains.

    • Is it normally safe to drink the milk used to activate the kefir grains? Also, what must be done to start making kefir with grains that were put in the refrigerator for a break?
    • We do not recommend consuming the milk used to rehydrate the kefir grains. Kefir is ready to consume when it is thickened and has a pleasant aroma and taste.
      Milk from grains stored in the fridge is generally not pleasant to drink either.

    • Can I use organic ultra pasteurized 2% milk with the milk kefir grain? And how do I know the kefir grain is activated? Thanks!
    • The results with ultra pasteurized milk can be a little unpredictable. Some brands seem to generate better results than others so you might need to experiment to find a brand that works well for you. Yes, you can use 2% milk. The texture is generally a little thinner than whole milk but will still result in a delicious, tangy flavor.

    • Your milk kefir grains should be stored in the refrigerator when you receive them. When at room temperature, the grains are shelf stable for 12-18 months.     • Can I add organic sugar to milk kefir during the culturing process? If so, will this make the final product sweeter?
    • When culturing milk kefir, there should be milk and milk kefir grains. If you want to flavor after, that is best. We don't recommend adding sweetener during the culturing process.

    • What is the sugar/carb content of the kefir?
    • The nutritional profile of your finished kefir will depend on many factors. The milk you use is the biggest factor of course.
      Temperature, length of culturing and use of a second fermentation will also affect nutrient content.

  • From my kefir grains are getting tiny and most have disappeared at 3/11/2014 9:30 AM
    • The title says it all. My grains, after a period of flourishing, have grown gradually tiny and their mass has diminished over the last month and now they are almost gone entirely.The only variable I can identify is a change from one brand of whole milk to a another--the brand I changed to has a website that promises that their farmers pledge not to put bovine growth hormones into the feed of their cows and that was why I made the change. Anyway, Why have my grains gone away?
    • The most likely cause would be that your grains are not getting enough fresh food. To ensure that your grains are getting enough food, stop the culturing process when the milk thickens to a buttermilk like consistency. If you prefer a more tangy flavor or for your kefir to separate, you can complete a second fermentation on your milk kefir after you've put your grains into a fresh batch of milk. A second fermentation on your finished milk kefir is also a great opportunity to add a little flavoring. The grains are working great! It's so easy once you get them started which for me took about a week. Now I make 1 qt of kefir everyday which costs about $0.50/qt. v.s. $3-4 from the store. Yea!!

We received our grains and followed instructions to rehydrate them. Now we are making 4 cups every day. My grains haven't grown but that has not stopped them from producing kefir. My husband and I and our two dogs drink the whole 4 cups daily. My husband has been teasing me about my "experiment" but he is now admitting that he feels so much better and our two dogs beg for kefir and are running around like young dogs. Their coats are nicer and their eyes brighter and they have more energy. The strange thing is that both my husband and I are lactose intolerant. These nifty little grains feed on the lactose and we have had no problem with the lactose at all. I am so happy that Cultures for Health offer these fantastic kefir grains. For the initial price along with the cost of milk, you can have a lifetime of healthy drink. We drink it straight, we put it in smoothies, we add fruits and juices. The possibilities are endless.

Mine had a slow start- might be the temp in the house and it is multiplying very slowly (I use organic milk) but what I have there is very healthy looking grains..Oh and did I say I am ADDICTED to Kefir! Can't seem to get enough...I love it...

I received a very small amount - 1 teaspoon re-hydrated- it took forever to do more than 2 cups of milk.

Response from CFH: One teaspoon of milk kefir grains are all that is needed to culture up to 4 cups of milk. Please contact us before discarding any cultures. Some cultures may require a minor adjustment.

I first ordered milk kefir grains and they did not work right, they must have been bad because all I made was rotten milk. After speaking to customer service, I received some new grains along with detailed instructions and this kefir has turned out to be wonderful. It has worked great from the start and we have made some good kefir that my family loves.

Awhile back I had some grains that were so hard to use, never growing significantly and hard to strain out and reuse. I gave up for awhile, but missed this wonderfully probiotic drink so ordered these grains. Within 2 days they were making kefir. They have grown and multiplied, are easy to strain out of the finished product, and live happily on my counter in local raw milk from grassfed cows. I'm a fan!

After 4 days I started to drink kefir, it was fresh and good the first week. The next week kefir had smell and I had to through away everything.
Bad instruction! Special in the begining.

I'm really happy with the kefir grains. When they came, I was feeling anxious that I would not be able to get them to work. I followed the instructions exactly, and in about 5 days I began to make kefir. The small amount of grains that I got makes 1.5 cups of kefir in about 12 hours in my 77 degree house. I am looking for a cooler place in the house to store them, and plan to add more milk so that I can slow down the process a little.

I was so looking forward to trying this new endeavor. I'm sure the fault was all mine (though I followed the directions as closely as I could), but I was never able to get kefir that tasted good. In fact, I would describe the taste as foul. I'm sure it was a case of user error, but I don't know what I could have done differently. I wound up throwing away the grains after a couple of weeks' worth of attempts (and quite a bit of wasted milk). I would recommend trying it, and I may again in the future because I would be delighted if I could make it work.

Reviewing after an 8 day experience, including the rehydration period.

The day I started rehydrating coincided with a really hot weather wave for 2-3 days.The second and the third days the yield I had was a fermented product in a consistency of yoghurt, which tasted extremely good. By increasing the amount of fresh milk as suggested, I started to get fermented kefir in a drink consistency.

After 5-6 days, the little amount of grains I started with began to swell in size, which I hope grows bigger as many others experienced.
