Milk Kefir Grains

My milk kefir grains arrived promptly and in good health. I followed the directions, using whole milk for a few days to get them going. I have since been using organic skim milk, and the resulting kefir is amazing. I make 12 oz every day, putting 4 ounces in my muesli for breakfast, and drinking the other 8. The taste is phenomenal. I love the texture, and the grains are reproducing at an amazing rate. It took me about a week or so to get the grains:milk ratio just right. Things are going perfectly for me with a heaping teaspoon of grains in a mason jar with 12 oz milk, covered with a cloth held on by a rubber band, left to set up in a cabinet. I had a few days of total separation, which was perplexing and upsetting. The problem, I discovered, is that I had the jar of kefir in the cupboard above my range and microwave. The heat from cooking dinner below was making the whole process go too fast. I simply moved the jar to an adjacent cabinet, and I now get perfect, fresh kefir every 24 hours. I would buy this product again, though I don't see any need for that at the rate they're multiplying. Thank you very much!
