Kefir Cucumber Salad

 

Kefir can be used for more than just savory dishes. In this tangy, fresh cucumber salad kefir marinates with garlic, apple cider vinegar, and cumin to become deliciously fresh salad.

 


Ingredients:

  • 2 medium cucumbers, quartered lengthwise and diced
  • 2 garlic cloves, minced
  • ¼ - ½ teaspoon sea salt, or to taste
  • 1 teaspoon apple cider vinegar or well-fermented kombucha
  • ½ cup kefir (cow or goat)
  • Pinch of ground cumin

Instructions:

Combine all ingredients in a medium-sized bowl. Allow to marinate in the refrigerator, covered, for fifteen minutes before serving.
