Kefir Cheese, Banana, and Peanut Butter Spread
Many people start out quite skeptical of milk kefir. It is just a bit more adventurous than the yogurt you might be used to.
If you'd like to get more kefir into your menus, but you are just not sure about the flavor, start slowly! Try using half yogurt and half kefir in your smoothies before gradually switching to 100% kefir. Pour it over cereal along with a bit of milk. Mixed it with fruit and honey.
It may take a while to retrain your taste buds, but that “good feeling” you get from kefir really does the trick.
There are lots of palatable ways to get more kefir into your life. Kefir cheese looks and tastes quite a bit like the familiar cream cheese. And in this recipe it is mixed it with two favorite foods to create a versatile and quick snack that can be eaten as-is or along with something else.
It is also packed with protein, making it a great snack for keeping your energy levels even.
Kefir Cheese with Banana and Peanut Butter
Recipe note: This is a ratio rather than a recipe because it can be made in any amount. Because the banana browns over time, however, it doesn’t keep forever so we recommend taking the extra two minutes to throw it together fresh.
(To clarify, if you start with 1 cup of kefir cheese you would use 1/2 cup mashed banana and 1/4 cup of peanut butter.)
Smash together the kefir cheese and banana with the back of a fork. Mix in the peanut butter until you have a thick dip-like consistency.
Now the fun part: eat it as is off a spoon for a quick snack. Spread it on sourdough toast for breakfast or a snack. Dip apple slices, carrot sticks, or crackers in for a crunchy, sweet, and tangy treat.
