A Protein-Packed Kefir Recipe for Those Who Don’t Like Kefir: Kefir Cheese, Banana, and Peanut Butter Spread

Like many people, our family started out quite skeptical of milk kefir. It was just a bit more adventurous than the yogurt we were used to. So we started slowly down the path to taking in more kefir. We used half yogurt and half kefir in our smoothies before gradually switching to 100% kefir. We poured it over cereal along with a bit of milk. We mixed it with fruit and honey until you could barely taste it. Eventually we even began to drink it straight from the glass. It took a while to retrain our taste buds but that “good feeling” you get from kefir really does the trick. Still, I’m always looking for palatable ways to get more kefir into my family. When I started making kefir cheese a few members perked right up at something that looked just like our beloved cream cheese. And then in this recipe I mixed it with two of our favorite foods to create a versatile and quick snack that can be eaten as is or along with something else. It is also packed with protein between the kefir cheese and the peanut butter, making it a great snack for keeping your energy levels even. Kefir Cheese with Banana and Peanut ButterRecipe note: This is a ratio rather than a recipe because it can be made in any amount. Because the banana browns over time, however, it doesn’t keep forever so I recommend taking the two minutes it takes to throw it together fresh.
(To clarify, if you start with 1 cup of kefir cheese you would use 1/2 cup mashed banana and 1/4 cup of peanut butter.) Smash together the kefir cheese and banana with the back of a fork. Mix in the peanut butter until you have a thick dip-like consistency. Now the fun part: eat it as is off a spoon for a quick snack. Spread it on sourdough toast for breakfast or a snack. Dip apple slices, carrot sticks, or crackers in for a crunchy, sweet, and tangy treat. |
