Ideas for Marinating or Coating Cheese


Try these creative dressings to enhance the flavor of goat cheese or mozzarella. Choose two or more ingredients from the list, cover with olive oil and you’ve got a tasty treat!

For Marinating


  • Goat cheese or mozzarella log, about 10 to 12 ounces
  • Herbs and spices of choice: 1 to 2 tablespoons total of two or more
    • Garlic cloves, fresh or roasted and chopped roughly
    • Zaatar or sumac (Middle Eastern spice with a slight citrusy flavor)
    • Chopped sprigs of rosemary, thyme, or parsley
    • Sundried tomatoes, chopped
    • Roasted walnuts or almonds
    • Porcini or crimini mushrooms, chopped
    • Lemon zest


  1. Slice cheese into 1/4- to 1/2-inch pieces and place slices into a 16-ounce jar one at a time, layering herbs and spices between.
  2. Cover with olive oil and refrigerate for one hour or overnight.
  3. After the cheese is consumed, a use the leftover oil for dipping bread or stir-frying vegetables.


For Coating


  • Goat cheese or mozzarella log, about 10 to 12 ounces
  • A mixture of your choice from the following:
    • Chopped, roasted pistachios
    • Chopped, roasted walnuts
    • Chopped, roasted almonds
    • Fresh herbs such as rosemary, thyme, lavender, parsley, or chives
    • Chopped peppercorns (pink or mixed are lovely)
    • Salt
    • Zaatar or sumac (Middle Eastern spice with slight citrusy flavor)
    • Food-grade ash (for visual contrast, protection, and ripening)
    • Dried cranberries or currants


  1. Mix coating ingredients in a pie plate or shallow dish.
  2. Roll cheese in coating ingredients.
  3. Slice cheese into half-inch portions
  4. Let flavors marry for 1 to 2 hours or overnight.
