Honey Yogurt Bread


A few minutes of preparation the night before, and this makes a delightful brunch treat.


  • 3 cups whole wheat flour (or spelt flour)
  • 2 cups yogurt
  • 1/2 cup filtered water
  • 3 eggs, beaten
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 1/4 stick butter, melted
  • 1/3 cup honey


  1. Mix flour, yogurt, and filtered water together. Cover and allow to sit undisturbed for 12 hours. (Bread will be fluffier if left for 24 hours.) 
  2. Add remaining ingredients and work in well. Turn dough out into a large, shallow floured bowl. Begin mixing the dough with a wooden spoon, working it well for 3 to 4 minutes.
  3. Scoop dough into a buttered and floured loaf pan. Bake at 350°F for 60 to 90 minutes, or until a toothpick inserted into the center comes out clean.

Cool completely before slicing and store in a plastic bag.
