Goat Cheese and Grilled Chicken Panini
This tasty panini recipe is written for those without a panini press. It is just as delicious as a standard panini, but with less equipment. A flat, round, cast-iron pan, known as a comal, is traditionally used to make tortillas or to sear meat, but is perfect for making your own paninis.
1 pat of butter
2 slices Italian bread
1 ounce goat cheese
2 tablespoons basil
2 slices of tomato
One 4-ounce grilled chicken breast (this is a great way to use leftovers!)
Salt and pepper
Heat a cast-iron comal over medium heat and melt the pat of butter.
Use a silicone brush to brush the bread with the melted butter, then place one slice of brushed bread on the comal to toast.
While the bread is toasting, spread it with the goat cheese, sprinkle it with basil, top it with tomatoes, and finally place the chicken on top, followed by the other piece of bread.
Flip the sandwich, toasting on both sides and using a metal spatula to compress so as to melt the cheese and meld the flavors.
Cut in half and serve warm with fresh fruit or veggies.
Makes one panini.
