Beautifully crafted stoneware crock from Germany by Nick Schmitt and Sohn.  Suitable for almost all types of vegetables, this crock provides a traditional method for naturally preserving food through culturing in a salt/water brine solution.  Made of stoneware, this beautiful sauerkraut crock or pickling crock will stand the test of time.

Comes complete with the pot, lid and internal weighing stones to keep the vegetables submerged under the brine.

 

Which Size German Fermenting Crock?
The German crocks come in several sizes.  Keep in mind that the crocks can only be filled to 80% capacity.

    • Can you ferment kombucha, kefir, and tej in this crock? Basically, can I ferment more than veggies in this?
    • Yes, You can ferment anything in the crock. Kefir may be hard because you have to change it every other day and the crock is heavy, but other than that, yes!

    • Are the glass lacto weights suitable for the 10 litre crock?
      If so, would I need to order(2) of them to put on top of the vegetables? If not, what do you recommend?
    • All of our German Fermenting Crocks come complete with the crock, lid and internal weighing stones. The stones are perfectly sized for each crock they are included with.

    • Can I run my crock through the dishwasher to clean?
    • Due to the nature of glazed ceramics, we recommend hand-washing our Fermentation Crocks.

    • How does the german crock differ from the Harch crock?
      Would the directions for making culltured vegetables be the same? Why is the weight difference so great?
    • The crocks are made by different manufacturers. Their specifications and method for manufacturing accounts for the difference in weight. The basic design and method of use is the same and recipes would be followed the same for both.

    • The lid is stoneware, the same as the crock.

    • There is a channel around the lid for water. Does it form a corresponding channel on the inside of the crock where liquids pool when you pour liquid out of the crock?
    • No, the channel is formed in a Y shape so that the liquid won't pool. You can see this in the cutout picture of the Harsch crocks, here: http://www.culturesforhealth.com/media/docs/Harsch_Crock_Information.pdf
