Make delicious Feta, Cottage Cheese, Cream Cheese, Fromage Blanc, and Traditional Quark at home with this easy-to-use kit. This kit includes recipes and ingredients. Just add milk! Perfect for beginners. Each cheese typically can be made in under an hour although some varieties require straining or can be aged (optional). This kit makes 15 to 24 pounds of cheese depending on the variety of cheeses made.

    • Our cheese kits are designed for use with dairy milks. Non-dairy milks will not produce a satisfactory product.

    • How many packets of Mesophilic Direct-Set Cheese Culture do you get in this kit?
    • This comes with 8 packets of Mesophilic Direct-Set Cheese Culture. Use as directed by your recipe or at the following rate: 1 packet per gallon of milk, 2 packets per 2-5 gallons, or 4 packets per 5-10 gallons.

    • can you use raw milk and how does that affect shelf life if any?
    • Raw milk may be used to make all the cheeses in this kit. The shelf life is not affected by using raw milk.

    • Yes, you sure can! You might have slightly different results for some recipes, since goat milk is slightly different from cow milk, but it will work just fine!

    • When making cheeses with the fresh cheese kit, what is a suitable ambient temperature for making and for allowing it to sit? I don't see any. But I thought I recalled seeing for some cheese making that you needed to let it sit and age at around 45-55 degrees (a wine cooler would work well for this yes?) but maybe that was for hard cheeses?
    • Each cheese in the Fresh Cheese Kit requires a different temperature for culturing. Once cultured, the cheese should be stored in the refrigerator and consumed with in a week or two, according to the instructions. Soft cheeses such as the ones made with this kit do not require aging.

    • Can you use Lactose free milk?
    • While lactose free milk may in theory work for some fresh cheeses, there are very few brands that are not Ultra-Pasteurized. Ultra-pasteurized milk does not culture or set well and so generally gives poor results.

    • Can I use this kit to make farmer's cheese as well? Seems like it is in the same family of cheeses....

I have made two kinds of cheese thus far with this kit. The fromage blanc came out very well, the feta seems to need more practice. The instruction booklet is very clear, though I noticed with the fromage recipe, the ingredient list called for rennet, but there were no instructions in the recipe as to how or when it was to be used.

Response from CFH: The fromage blanc recipe in the kit booklet does omit the rennet. We apologize for the error and will have that corrected right away. (Posted on December 11, 2013)

everything was in the kit, BUT the thermometer was way to small, hard to hold and even harder to read it. I would suggest buying your own from Wal-Mart. (Posted on November 13, 2013)
