This allows you to make pickles, sauerkraut and other fermented vegetables, fruits, condiments and more while greatly reducing and often eliminating the threat of mold.

Includes glass jar and plastic lid fitted with airlock and rubber stopper.  Three sizes available.

    • When storing this jar in the fridge, do you have to use that lid? Concerned about clearance.
    • No, you can store vegetables in the refrigerator with any jar lid that fits. The purpose of the fancy lid is to let gases escape during fermentation, while keeping out air from the room that might contain ambient bacteria and yeasts that would interfere with the fermentation, or cause mold.

    • Is this a standard opening size canning jar? Can I just buy the lids and put them on quart or half gallon mason jars?

    • No, sorry, this is a specially sized lid made specifically for the fermenting jar, which is a little bigger than a standard wide-mouth canning jar.

    • The jars that we sell with these lids are not a standard canning size. The jar openings are sized as follows: Gallon: 3.25", Half: 3", Quart: 2.5", Pint: 2.25"

    • Practically any container could theoretically be used to ferment kefir, but it's really not necessary to use something so elaborate. Kefir can easily be fermented by just putting the grains in a jar with milk and covering it with a paper towel, then leaving it at room temperature for 24 hours or so.

    • I am looking for a container that I can put fresh juice in that will minimize oxidation. I am using a Champion and juicepress to make the juice. Will this jar work for that? I realize the nutritional value of fresh juice is most potent within 2 hours, but I am unable to juice multiple times a day and am seeking a good alternative.

    • That's a pretty good question! The purpose of the Vegetable Master's valve is to let the fermenting gases escape, while not allowing outside oxygen to enter. It is quite possible that this would also minimize oxidization to the juice, but it seems like just a tight lid would serve the same purpose, since the juice does not need to vent any gases.

    • About the jars, you state, "They are FDA-compliant, which means they are BPA, PVC, Pthalate, and Lead-free". Does that also apply to the plastic cover ? Thank you.
    • We don't have information on the plastic lids, since the manufacturer is not required to disclose it except for baby bottles and other food containers. However, the vegetables in the crock should not be touching the lid as that would make the jar too full for proper fermentation, and the airlock would not work properly. The grommet on the valve is rubber and the airlock is plastic.

I've made several batches of mixed vegetable ferments with the jars. The only drawback is that I wasn't able to keep the vegetables covered with water in the jars (no weights) so the very top layer turned brown. But generally the jars are great. (Posted on July 27, 2011)

I made sauerkraut for the first time with the Vegetable Master. I fermented cabbage and carrots for about a week.It was a little crunchy but tasted tangy like sauerkraut should. My next step is to experiment with different sea saltsand longer fermentation. (Posted on July 16, 2011)
