How to Make Coconut Yogurt

Making yogurt at home can be fun, because there is so much variety available. Coconut milk yogurt can be wonderful for a change of pace or for those who do not consume dairy products. Here’s how to get started:

Step 1: Choose the Coconut Milk

  • Canned or boxed, unflavored, with as few additives as possible.  Guar gum is fine, but other additives may interfere with the culturing process
  • Homemade coconut milk

Step 2: Choose the Thickening Agent

Coconut milk is not particularly thick when cultured on its own. Adding thickening agents such as these can help to produce a spoonable yogurt:

  • Gelatin
  • Pectin
  • Tapioca Starch

Consult our article on Adding a Thickener When Making Yogurt for detailed instructions on adding various thickeners.

Step 3: Choose the Yogurt Starter

  • Vegan Yogurt Starter is a single-use culture and works well with coconut and other non-dairy milks, when thickeners are added.
  • Mesophilic Heirloom Starters, which work at 70-77ºF, are reusable dairy cultures. When making non-dairy yogurts, it is necessary to maintain a pasteurized dairy mother culture for these yogurt starters. We carry 4 varieties: Viili, Matsoni, Piima, and Filmjolk.
  • Thermophilic Heirloom Starters, which work at 110ºF, are reusable dairy cultures. When making non-dairy yogurts, it is necessary to maintain a pasteurized dairy mother culture for these yogurt starters. We carry 2 varieties: Greek and Bulgarian.
  • Thermophilic Direct-Set Dairy Starters are single-use cultures that may be used directly in coconut milk, but will generally not reculture, as they may when used with dairy milk. We carry 4 varieties: Traditional, Mild, Kosher Traditional, Kosher Mild
